Sugarless Fruit Nut Muffins

I thought these muffins were delicious! I used whole wheat instead of white flour. I only rated them 4 stars b/c of the high fat content. That is disappointing from a healthy muffins (27% of your daily dose of saturated fat in one muffin!). I also thought the buttery taste was quite strong. Next time I will substitute with some apple sauce and I think it will become a 5 stars.

Peanut Butter Balls II

Amish Macaroni Salad

Too sweet for me. Even at 1/4 cup of sugar that was too much. The miracle whip and the relish in itself are sweet enough. Will use mayo and forget the sugar next time. Also too much dressing for the amount of pasta. Personal taste.

Delicious Raspberry Oatmeal Cookie Bars

Those bars were excellent! Used low sugar strawberry jam, old fashioned oats, 6 tbsp of butter and 1/4 cup of applesauce to make it healthier. Will definitely make again.

Almond Maple Granola

Very good. Really liked the maple flavor. The best combination for me is 1/2 the required coconut and 1/2 the brown sugar. Still very sweet. Thanks for the recipe.

Downeast Maine Pumpkin Bread

Healthy version. I should not be rating this recipe because I made so many changes but the healthy version is just excellent so I thought to share it. Used 16oz pumkin puree, ½ canola oil and ½ cup applesauce, 1 cup white sugar and 1 cup brown sugar, 2 cups white flour and 1 ½ cup wheat flour, ½ cup raisins, and 1 cup of walnut and peacan pieces. Increased cinnamon slightly and did not use ginger. Used 2 9x5 bread loaf pans and baked 55 min. Delicious!! Thank you for this recipe and for reviewer's recommemdations.

Orange Mocha Muffins

Just not crazy about the orange and chocolate flavor mix. I thought they were just so so. I did use coffee flavored yogurt instead of plane and omitted the ground coffee. That could have had an impact.

Thousand Island Dressing II

Better than store bought but nothing spectacular. I halved the recipe and it made a lot still, especially for salad use only. I also used less than 1/4 cup of the sweet relish. Otherwise I agree that it would be way too sweet. I thought the dressing was a little too thick for the salad. It would have a perfect consistency to put in a hamburger though.

Spinach Tomato Tortellini

Rated 3 stars because I thought that was nothing special. I have to admit I did substitute 1/2 and 1/2 for the cream which could have made the difference. If I were to make again, I would increase the garlic to 2 cloves, add 2 tsp cornstarch (I used 1 tsp)diluted in water and would add mushrooms.

Indonesian Satay

Very good. Chicken came out very moist. Marinated for 1 hour and baked in oven on a rack placed on cookie sheet at 375F for 18 minutes, turning occasionaly. Will make again. Thank you.

No Bake Peanut Butter Pie

Excellent recipe. Thank you. Divided the recipe in 2 for 1 pie only. Added a little more peanut butter as per reviewers. To do if you wish to have a strong PB taste, otherwise stated amount would be good. Use 1/3 fat cream cheese. Used Graham Cracker Crust I from this site. Omitted the cinnamon. The crust was too thick for this recipe. Froze overnight. Make sure to take pie out 30 min before serving for optimal results.

Berry Oatmeal Muffins

Good but nothing really special. I did use 1/2 cup of wheat flour and 1 cup of white flour. I would definitely recommend using fresh instead of frozen blueberries. I thought they were a tad sweet as well. Just personal taste. Did not finish them.

Sauce Rosee

As per other reviewers, decreased the oil to 3 tbsp and omitted the red pepper flakes. My husband added the pepper flakes at the end. We also served with pieces of cooked turkey bacon and grated parmesan cheese. Also boiled the wine and the tomato sauce together to lighten the taste of the wine and because I am pregnant. Next time will decrease the sugar by half (this was way to sweet for us) and will use 4 cloves of garlic instead of 3. Will make again. Thanks for the good recipe.

Apple Walnut Bread

Excellent bread and healthy. Used also 1/2 cup of apple sauce and 1/2 cup of oil. Decreased the sugar to 1 1/2 cup and the salt to 3/4 teaspoon. All my friends wanted the recipe! Thank you.

Seafood Salad III

Used 8oz of crab meat and there was way to much sauce for the crab meat. Mixed it with avocados and dropped that on some greens and that was quite good. Will do it again.

Vegetable Shepherd's Pie

I thought that was very good. Used fresh veggies instead of frozen: 2 carrots, 2 celery branches, 1 red pepper, 5 very big mushrooms and 1 can of corn. Sauteed onion with 3 big garlic cloves then added the carrots and finely, the rest of the veggies. Followed the rest except added ½ teaspoon of Italian seasoning to the mix. Melted butter (2 ½ tbsp), pasley and 1 clove of garlic on stove for ~1-2 min on low heat to add to the mashed potatoes: mmm...

Vegetarian Sweet and Sour Meatballs

This was very good. I did use fresh bread crumbs but dried them in the oven prior to using them and it turned out just fine. I used low fat cottage and cheddar. Great recipe! I might decrease the sugar next time, just a question of preference... Thanks for the recipe.
