Fabulous Fruit Salad

Absolutely wonderful! I used pecans instead of walnuts (because that's what I had on hand). Either would work fine. The celery is a must. I'm not sure why so many of the other reviews left it out. Some of the reviews also suggested replacing the nectarines with oranges. I suggest if you can't get nectarines use peaches, because of their similar texture and flavor. My 3 year old loves it... but then again her favorite flavor of yogurt is lemon. I'm sure I will be making this salad many more times.

Ukrainian Red Borscht Soup

Very good soup. I served it with a homemade crusty bread. I had never tried a Borscht before, so I didn't know what to expect. The tomato base reminds me of a old fashion vegetable soup ... just different vegetables. I didn't have fresh beets on hand so I used a pint jar of canned (that I had put up earlier this summer). I just drained the liquid and added them after the cabbage so they would not cook down to a mush. I also did not have fresh garlic so I substituted garlic power. I have no doubt that fresh garlic would taste better, but sometimes you just have to work with what you have on hand. The instructions call for a "large pot". You should use at least a 6 quart stock pot. I started out with a 4 quart and had to transfer to a larger one. I will definitely make this soup again.

Beth's Scalloped Cabbage

Absolutely wonderful. Very versatile (which is a sign of a good recipe). I steamed the cabbage instead of boiling it and sautéed 1/2 onion in the butter before adding the flour and milk. I used a couple slices of American cheese as well as added black pepper. I also had some French's Fried Onions in my cabinet, so I used them with a few crushed saltine crackers for the topping. My three year old ate it, (she doesn't like cabbage) so this recipe is definitely a keeper! It's a great dish to take to a family gathering. Easy to make as well. If fact, you can mix it up the night before and put it in the refrigerator. Then all you have to do is put it in the oven (it will take longer to cook because it will be cold). Just add the topping after it starts to bubble.

Best Cream Of Broccoli Soup

This is amazing. It was in the back of my mind that I could add cheese if I need to make it taste better. But it's wonderful as is. My 3 year also loves it.
