Pesto Chicken Florentine

When I made this, I forgot to add the Romano cheese, but it was still good. If you buy the bagged spinach, you have plenty leftover to make a salad.

Gina's Lemon Pepper Chicken

This was delicious! It was easy and my son, who has food allergies, was able to eat it. It was nice to prepare a meal we all could eat. Next time, I will make extra to cut up onto pasta or a salad.

Penne with Spring Vegetables

I liked the idea of this recipe, but made some changes to suit my tastes. I prefer my veggies stir-fried instead of boiled, so I cooked them in olive oil in a pan along with some chicken and some Mrs Dash. I also used whole wheat rotini instead of penne. All around a very healthy dish.

Warm Fiesta Chicken Salad

This was great! The only comment I would make is that, if you know you aren't going to eat all of it at once, then keep the greens separate from the chicken and the bean mixture until you are ready to eat it. Then you only have to heat up the chicken and beans. It will keep the lettuce from getting too soggy.

Pasta Salad with Shrimp and Basil

This recipe was pretty bland. I ended up adding more salt and pepper and even some lemon pepper to give it some flavor. If I make this recipe again, I will use some different spices and might even use cut up chicken that has been marinated instead.

Salmon with Dill

My husband really liked this, but I didn't like it that much. I'm not that much of a fish eater though. My kids (4 and 6) ate it. It's a very easy recipe and if you like salmon a lot, it's definitely worth trying.

Carol's Arroz Con Pollo

Really easy and tasty and healthy too! I followed the suggestions of some other reviewers and added diced green chilies and some chili powder. Would like to add frozen peas next time too. I didn't have any saffron either, so I would like to see what that adds to the flavor. Will definitely make this again!

California Sherry Chicken

My husband LOVED this dish. I followed some of the recommendations from this site and added sage and rosemary to the flour as well as to the sauce (which I doubled). I also left everything in the pan instead of removing it as I went along. I only used 2 zucchini, as they were pretty good-sized. Next time, I will probably add a little flour to the sauce at the end to thicken it up a bit. I thought it was too runny. I will also add mushrooms.

BBQ Chicken Pizza II

Really simple and really delicious. I didn't follow specific quantities, just went with what looked right. I also followed another reviewer's suggestion to spread a little cream cheese on the crust first. Used Boboli whole wheat crust and a little cheddar, as I didn't have enough Monterey Jack. Definitely will make again!

Rotini with Chicken

Very good. I used the Pesto Rice Vinegar, since that's what I had and it's basil-y. I used sliced stewed tomatoes, but will use petite diced next time, as the pieces were a bit big for my kids.

BBQ Chicken Pizza I

My husband and I liked this a lot. The kids weren't so crazy about it. I did half with mozzarella and half with gouda to compare the tastes. The gouda was definitely a better taste--the smokiness counteracted the sweetness of the sauce--but the mozzarella was good too, and definitely cheaper. I also forgot to add the cilantro to the sauce, so I threw it on top at the end. Will have to try it in the sauce next time.

Grilled Brown Sugar Pork Chops

Super easy and tasty too. I doubled the soy sauce and ginger so that it wouldn't be as sweet. I also just spooned the sauce over the pork once it was plated. There was a bunch of leftover sauce, so I refrigerated it to serve over chicken another night.

Chicken Quesadillas and Fiesta Rice

I've made this recipe for years. As directed it is probably only a 3-star recipe. To make it four (I would have given it 4 1/2 if that was an option)--pre-cook the chicken (poaching in boiling water works great) and shred it instead of cutting it into pieces. While the chicken is cooking, make the rice and then add half of it to the chicken and soup mixture.

Easy Chocolate Sherbet

This was okay as is for my adult tastes. However, since I made it for my dairy-allergic son, the amaretto just didn't work. I will try it again but with vanilla extract next time.
