Blueberry Cheesecake Ice Cream

Made this for 4th of July and it was a big hit! Followed other reviewers' suggestions and used a graham cracker crust and a can of blueberry pie filling to make it easier. I thought it worked better to add the blueberries and the crust for the last little bit into the ice cream maker. It was better mixed that way. Also you might want to note that this makes a TON!

No Bake Lime Mousse Torte

This was really good. Not as heavy as I was expecting. Some reviewers have said that it should be called No Bake Lime Cheesecake, but that would be a misnomer too, as it is much lighter than you average cheesecake. Make this when you're going to have a crowd because it makes a LOT.

Spicy Garlic Lime Chicken

Delicious, easy, and able to make with things I have on-hand. It's the great recipe trifecta! The only change I made was to use a little less cayenne pepper to suit the kids' tastes.

Slow Cooker Italian Beef for Sandwiches

This was really good, but made a TON! I followed the suggestion of using two dressing packets. I also used onion powder instead of onion salt. If I were to make it again, I would halve the recipe and use just one packet. Even that would leave lots of leftovers.

Slow Cooker Chicken Taco Soup

This was delicious. I followed the suggestion of one reviewer and put my chicken breasts in frozen, then let it cook for 9 hours. The chicken pretty much fell apart. I put cheese on it, but my husband didn't. We both liked it, which is good because it made a lot. My kids liked it too even though it was a little spicy.

Lentil and Sausage Soup

This was really great. I did it as written, but did not include the pasta. Might make it in the crockpot next time. It was a great winter soup. My whole family loved it. Thanks! UPDATE: Cooked this in the crockpot. Browned the sausage, then put everything in the crockpot, but only 6 cups of water. I had cut up the veggies the night before to make it easier in the morning. Cooked on low for 8 hours. It was delicious!

Pumpkin Gingerbread

Delicious! I made in a cupcake pan and topped with Cream Cheese Frosting II from this site. It makes about 30 cupcakes, which I baked at 325 for 25-30 minutes, testing with a toothpick for doneness. My kids loved them!

Sun-Dried Tomato Dip

This was delicious. I followed other reviewers' suggestions and increased the amount of sun-dried tomatoes and used only one clove of garlic, though it was a large one. I also mixed it by hand, not in a food processor. Everyone at my party raved about it.

Ali's Amazing Bruschetta

This is a really good recipe. I added a clove of minced garlic and used 1 t dried oregano instead of fresh. I also didn't have any Italian bread, so I used sourdough. I didn't bake it with the cheese either. I just toasted the bread in the toaster and heaped on the bruschetta mixture. Overall, a great, healthy snack.

Very Chocolate Ice Cream

This was VERY good. I used Dutch process cocoa and semi-sweet chocolate chips. Some of the chocolate pieces must not have melted fully because we ended up with a few solid pieces in the ice cream. We liked it though.

This was okay as is for my adult tastes. However, since I made it for my dairy-allergic son, the amaretto just didn't work. I will try it again but with vanilla extract next time.

Chicken Quesadillas and Fiesta Rice

I've made this recipe for years. As directed it is probably only a 3-star recipe. To make it four (I would have given it 4 1/2 if that was an option)--pre-cook the chicken (poaching in boiling water works great) and shred it instead of cutting it into pieces. While the chicken is cooking, make the rice and then add half of it to the chicken and soup mixture.

Grilled Brown Sugar Pork Chops

Super easy and tasty too. I doubled the soy sauce and ginger so that it wouldn't be as sweet. I also just spooned the sauce over the pork once it was plated. There was a bunch of leftover sauce, so I refrigerated it to serve over chicken another night.

BBQ Chicken Pizza I

My husband and I liked this a lot. The kids weren't so crazy about it. I did half with mozzarella and half with gouda to compare the tastes. The gouda was definitely a better taste--the smokiness counteracted the sweetness of the sauce--but the mozzarella was good too, and definitely cheaper. I also forgot to add the cilantro to the sauce, so I threw it on top at the end. Will have to try it in the sauce next time.

Garlic Chicken with Orzo Noodles

Very good. The only changes I made were to cook the noodles in chicken broth instead of water and I added basil. My whole family loved it.
