Pumpkin Butter IV

This did not make 2 quarts. More like 2.5 pints. I only used 3.5 cups of sugar, as I don't like it as sweet. Also added more pumpkin pie spice.

Kerry's Beany Salad

Subtly spicy. I like the variety of texture and color. I did follow another reviewer's suggestion and doubled the vinegar, garlic, and red pepper flakes. I also halved the oil. I took this to a work function, mixing the salad ingredients and the dressing ingredients separately the night before and then combining them that morning.

Taco Casserole

I followed another reviewers suggestion and used salsa instead of diced tomatoes. We only had medium salsa, and that with the taco seasoning made it a bit spicy, especially for the kids. Next time I will either use mild salsa or omit the taco seasoning. Easy to make this dairy free by not baking it and just putting the cheese on top when serving.

Slow Cooker Cilantro Lime Chicken

I have been making a similar version with just salsa for a few years and this was a delicious improvement. I just threw in frozen chicken breasts with the sauce. Served with chips or in a tortilla.

Red Skinned Potato Salad

I have never made potato salad before, but this was good and really easy. I followed some other reviewers' suggestions and used green onions and 1/2 Miracle Whip 1/2 sour cream. I also used turkey bacon, as that's what we use, using about half a pound. I also did not follow the directions given for cooking the eggs, as that resulted in underdone eggs. I followed my Joy of Cooking's directions for hard boiled eggs.

Ohio Sausage and Kale Soup

This is so delicious and easy! I used only 1 lb. of sausage and a few more potatoes since the ones I had were small. A great way to use up my CSA produce!

Backyard BBQ Chicken

This was really good and REALLY easy. I love recipes that can be made with ingredients I usually have on hand. Our chicken took more like 20 minutes on the grill. Next time I will served over rice to absorb some of the sauce.

Firecracker Salmon Steaks

This was WONDERFUL! The whole family loved it. Just enough spice to be interesting, but not so much that the kids won't eat it. Made this after working an 11 hour day, it was so simple. Had all the ingredients on hand too, though I did use powdered ginger instead of fresh. I also used salmon fillets because that was all I could find. It made a ton of sauce. We could have easily doubled the amount of salmon.

I liked this, though I should say I did not do the glaze. I didn't want it to be too sweet. Next time I may try it without the walnuts and with half white and half brown sugar..

Sweet and Sour Pork Chops

This was good and very easy. I did as other reviewers and cut the pork up to stir fry and marinated for about 30 minutes. I also added green pepper and onion, then served over rice. I didn't think it was very saucy, so I might double the sauce ingredients next time, but I will definitely make again. The whole family liked it.

Blueberry Crumb Bars

Delicious and so easy! A great way to use all those berries from the farmer's market. I have made this type of cookie for years using jam instead of fresh fruit. I did use butter instead of shortening, as that's what I've used in the past. Whole family loved these!

Almond Rhubarb Coffee Cake

This was wonderful. I only made a few changes. I added about 1 tsp of cinnamon, increased the rhubarb to 2 c (because that's what I had), and added a small amount of almond extract to the topping. I also baked it in a 9 x 13 pan for 40 minutes. My whole family loved it. Thanks for a great recipe!

Rhubarb Sauce II

This was wonderful! I rated it only 4 stars because I made several changes. I used a heaping 1/3 cup brown sugar and added some cinnamon and vanilla at the end. I also added some red food color since my rhubarb was pretty green. Delicious on angel food cake with whipped cream.

Slow Cooker Chicken and Noodles

I used carrots instead of celery. (We don't like celery.) I also used chicken broth and added poultry seasoning, a bay leaf, and some garlic powder. I still thought it was a bit bland, but the family liked it. With these changes, it would be good for a sick day, but for a regular dinner, I would like a little more flavor. I still give it four stars because it is easy, tasty, and can be made with ingredients I have on hand.
