Raspberry Sauce

More like 4.5 stars. Served over angel food cake. I used fresh raspberries from the farmer's market and skipped step 3. While it had a lot of seeds, it didn't bother me. I used 4T of flour to thicken mine. That was probably a little too much flour. Will try less next time.

Jo-Ann's Power Bars

More like 4 1/2 stars. I made a double batch in a 9x12 pan, used regular white flour (since that was what I had), added extra applesauce and omitted the oil, and used sliced almonds instead of sunflower seeds and walnuts. I cut them into bars and then wrapped individually in foil. I keep them in the fridge for long term storage, but they keep fine in my bag for a day. May try the chocolate protein powder suggested by another reviewer next time. My kids and workout partner liked them too.

Streusel Rhubarb Dessert

I used 4 cups of rhubarb. The bottom crust was a little hard to cut through, but it tasted so good! I did not add anything, but it would also be good with vanilla ice cream.

Pesto Chicken

Yummy and very easy. I used homemade pesto and turkey bacon. I also secured it all with toothpicks. I might try rotating the chicken partway through to get all of the bacon crispy.

Best Chocolate Chip Cookies

I followed another reviewers suggestion and added 1/2 t of cream of tartar. I also left out the nuts and used mint and dark chocolate morsels instead. Yum!

Italian Green Bean Chicken

I thought this needed a LOT more seasoning. Next time I may try the tomatoes with basil and oregano, as well as adding more of those as well. I served it over rotini, and I need to make sure the beans are broken into smaller pieces next time.

Slow Cooker Lemon Pepper Chicken

Easy and tasty. I would use more seasoning next time. Also, this created a LOT of liquid. While my slow cooker will kick over to warm after it's done, it might be better to get the chicken out sooner rather than later or get some of the liquid out so that it can brown up a bit more.

Cherry-Raspberry Jam

Used only 4 cups of sugar and had about 3 cups of cherries and 1 1/2 cups of raspberries. I cooked the fruit a little bit, then added the pectin. Then I added the sugar after it came to a boil, brought it to a boil again, then cooked for 1 minute before adding to the jars. Might have used even less sugar, as it was pretty sweet.

Apple Pie Ice Cream

I cooked the ice cream mixture because of the eggs (I used the "Ice Cream Base Recipe" on this site), but I neglected to let it cool enough before adding it to the ice cream maker, so it didn't freeze up very well. Will remedy that next time. Because of that, I didn't add the caramel sauce to the ice cream and just served it on top.

Vegetable Whip

Tasty, but I neglected to read the other reviews that said to cook the carrots longer, so they didn't mash up as well. I also added some garlic powder. Great way to use those turnips I get in my CSA.

Crab Rangoon

Peanut Butter and Banana Dog Biscuits

Easy to do and my dog liked them. I doubled the recipe because it said it made 10, but normal recipe size would be plenty. I did use more like 1 1/2 c of flour instead of just 1 because it was so sticky. I also used regular flour and oats instead of wheat flour and wheat germ because that's what I had.

Spinach and Tortellini Salad

I too used fresh spinach. Great way to use it up when I get a lot in my CSA from the farmer's market. I used a larger package of tortellini because that's what I had and used Olive Garden Italian. I eat this all summer long.

Easy Chicken Enchilada Crescent Bake

My family liked this, and it was a quick, easy meal. I found chipotle red enchilada sauce, and used that, which may have given it the greater flavor some reviewers found lacking. I used regular cheddar because that's what I had. I made mine smaller, cutting the dough sheets into 12 rectangles. My only complaint is that after 20 minutes, they were still gooey. Next time, I might try cooking them without the sauce on top for the first 10 minutes, then add sauce and cheese to finish.

Chicken Breasts with Lime Sauce

Rating is based on what I made. Good recipe to make with ingredients on hand. I thought it could be crispier, but the family liked it. I dredged the chicken in soymilk instead of egg due to allergies and used Italian bread crumbs. I also followed other suggestions and used chicken broth instead of butter, so I had 1/2 c broth and 1/4 c lime juice, then added dried dill and dried chives and poured it all over the chicken.

Spaghetti Skillet Dinner

This was a good recipe to use up some leftover ingredients I had on hand. I added 2 cloves of garlic as well as some basil and oregano when I added the peppers and mushrooms. Instead of a 28 oz can of tomatoes, I used a 14 oz can of Italian diced tomatoes and an 8 oz can of tomato sauce. I also used about 2 cups (1 can) of water. I served it before adding the cheese and used Parmesan instead (what I had).

Sweet, Sticky and Spicy Chicken

I followed several reviewers' suggestion and dredged the chicken in flour mixed with the salt and pepper. I then sauteed the chicken in my wok until browned and removed it to a bowl. I then sauteed red peppers and onions until crisp-tender, then removed it to the bowl and cooked the sauce for a minute or two before adding the chicken, peppers and onions back in. For the sauce, I used ginger powder and tabasco sauce, as that's what I had on hand. I also used 2 T of dark brown sugar. It came out with a nice flavor that had just a bit of a kick.
