Pecan Pie Bars

I added one tub of applesauce to the crust (more liquid but no more fat) as it does have too much flour and I added some almond essence too. It still needs to crumble when you press it into the pan. I added some cinnamon to the topping for an extra taste. A good quick and easy recipe.

Broiled and Slow-Roasted Butterflied Leg of Lamb With Cumin and Garlic

A wonderful dish! Even the kids liked it. I rubbed the "gloop" into the meat the night before and it was wonderful. A great preparation for even a cheap cut of lamb (I was using a leg from Sam's club so not the best quality and this recipe made it taste like $15 a pound lamb!) Tender and juicy - the searing keeps the juices in. I served it with new potatoes and asparagus and got rave reviews from my picky crowd.

Red Salmon Pate

I used 4oz of smoked salmon and added in 1tsp of capers too to kick it up a notch. Wonderful!! Easy to prepare in a food prcessor and do in advance.

Cheese Potato Puff

I cooked up 5 pounds of potatoes and it made an 8.5" x 11" dish of mash. Cooking the wet ingredients really helps to get a smooth mash when it is all mixed in. I sprinkled some chopped chives on the top before serving. I made it the day before and it was a hit! A great, easy do ahead potatoe dish!

Apple and Tomato Chutney

Peel the tomatoes first else you end up with stringy bits of skin. I added some dried peaches, anise and cloves for extra flavour. This is an excellent recipe! Highly recommended.

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

A very easy and fancy way to present fish! I was not too crazy on the sauce - too lemony and will probably go with a cheese sauce next time. I also used rue instead of dill on the fish, make 3 3oz portions but could just sneak them onto the phyllo, added a dot of butter on top of the fish and cooked for 13 minutes. My 5 year old ate her portion all up so that is always high praise!

Honey Pineapple Chicken

I modified this recipe to the ingredients I had on hand. I also always cook onion and garlic with whatever I am doing so that went in first, then the chicken in bite size pieces, balsamic vinegar, cider vinegar, honey and some salt/pepper and cooked that about halfway. Then I added pineapple chunks and adjusted seasonings, letting it cook some more. Just before serving, I sprinkled sesame seeds on top. It was a hit!!

Italian Country Style Ribs

Hi there, This looked too simple. But it is a great one!! I kicked up the sophistication with onion, garlic, red wine and fresh tomatoes - but not because the recipe needed it! I picked an interesting spaghetti sauce too - and got rave reviews!!! Thanks to everyone for their suggestions like extra browning and being adventurous - you will not be able to wreck this recipe!! Easy and great!!

Kay's Shortbread

An excellent, rich and heavy shortbread. I added 1 tablespoon of cornflour to add richness as well as a few drops of almond essence for a more nutty flavour. I baked it in a rectangular pan and cut squares. It was a huge hit!
