Roast Sticky Chicken-Rotisserie Style

WONDERFUL!! The house smelled heavenly while it was cooking. The meat was very moist and the chicken fell off the bone. I skipped the marinating in fridge and simply rubbed the spices in and left in the oven 5 hours. So simple to make.

Grandma's Famous Salmon Cakes

The salmon cake recipe I usually use has flour in it. I specifically chose this recipe because of the dredded low carb diet. I actually, to my surprise prefer the taste of this recipe. They are a little fragile to work with, but they didn't taste so cakey like the ones with flour do. I always use the pouches that are deboned, skinned, and drained. Who wants to pick through bones! I also added some spices, then topped with a little mayo and horseradish

Home Style Macaroni and Cheese

.Love this recipe....BUT...7 ounces of pasta would barely feed 2 people in my family (we're German i.e. big eaters) Plus that seemes like a lot of sauce for the ammount of pasta.. So I upped the butter to a 1/2 cup and left everything else the same and used a 1 pound box of macaroni. It was PERFECT!!

Amish Breakfast Casserole

This will be our new favorite breakfast casserole recipe. We wanted something that didn't use bread or canned soup and this fit the bill. We did substitute bob evans zesty sausage for the bacon. Added tsp salt, garlic,and onion powder. Great meal!

Cajun Chicken Pasta

We loved it. I really didn't measure any of the ingredients...just threw it all together...a spice here and there... used shrimp instead of chicken..added some canned diced tomatoes... It was very tasty, will make again

Cha Cha's White Chicken Chili

ABSOLUTELY DELICIOUS!! Very different and original. We talked about how good it was non-stop. The only changes made were I used a crock pot. I like soups that simmer for a while for more infusion of flavors. I did sautee the onion first, but put small cut up pieces of raw chicken in the pot. I pre-cooked a heaping tablespoon of flour in broth to add- to thicken it-because it was a little too soupy for our tastes. Following the other reviewers advice, I just used the green chili's and skipped the jalepeno's and it had the perfect amount of spice., and we do like spicey, Cooked on high 2 hours.

Shrimp and Crab Enchiladas

Delicious!! So tasty I forgot to add the sour cream. Only changes were I used only shrimp, instead of crab also, which I sauteed in cumin, olive oil, garlic, onion, chili pepper before stuffing the tortillas. I used the monteray jack inside and outside used a Mexican blend of cheese.

Pollo Fajitas

The combo of soy sauce & worch. didn't seem very mexican to me. So I marinated my chicken in taco sauce, lime, and cilantro, garlic, hot pepper. Tasted Great.

Sour Cream Coffee Cake III

Regular Chicken Soup

I used half chicken broth and half water. I let the veggies cook 15 min then added raw chopped up chicken breats to make it's own broth. Let that cook about 20 min then tossed in the noodles for the last ten minutes. It was wonderful. Added some parsley and salt and pepper too.

Mushroom Stuffed Chicken Rollups

After reading all the reviews- I got so many ideas- I just went with them. I changed quite a few things and we were very pleased with the dish. Briefly; I sauteed onion, garlic, a vegetable broth cube, a splash of red wine, in with the mushrooms. I added a couple of tablespoons of sour cream in the stuffing mixture. I put a slice of asiago cheese over the rolled chicken breast, and topped it with a mixture of cream of mushroom soup and cream. Also added a few extra spices here and there. It is now in our "hall of fame" the tried and true regular recipes that we make all the time!
