Mexican Rice III

This came out perfect! Very tasty. Only substition was I like to use a little can of green chilis instead of jalapenos. I used some canned diced tomatos also since tomatos aren't in season right now. We used this as a side dish with Salsa Chicken from this website-it was a great meal!

Oatmeal Pancakes

The consistancy of the batter is strange and the taste of the pancakes we didn't care for. If you are going to make this I would suggest putting the oats in a blender or food processer to make it into a powder. There were big chunks of flour sticking to all the lumpy oats floating around.

Great recipe--We mixed some ranch with sour cream like one of our neighborhood Mexican restaurants does and it is really delicious. We used that instead of the French dressing

Lemonade Cake II

This cake is very tasty. The recipe came out perfect needed no altering. I was going to try to pass it off as "homemade" ; but the taste of the mix and box pudding did come through, hense the four stars-not five.

Grandma's Famous Salmon Cakes

The salmon cake recipe I usually use has flour in it. I specifically chose this recipe because of the dredded low carb diet. I actually, to my surprise prefer the taste of this recipe. They are a little fragile to work with, but they didn't taste so cakey like the ones with flour do. I always use the pouches that are deboned, skinned, and drained. Who wants to pick through bones! I also added some spices, then topped with a little mayo and horseradish

Home Style Macaroni and Cheese

.Love this recipe....BUT...7 ounces of pasta would barely feed 2 people in my family (we're German i.e. big eaters) Plus that seemes like a lot of sauce for the ammount of pasta.. So I upped the butter to a 1/2 cup and left everything else the same and used a 1 pound box of macaroni. It was PERFECT!!

Easy Chicken Enchiladas

I cooked the onion and chicken in butter and a little chicken broth. In the same pan I added some cream cheese and the shredded cheeses etc. I added some cumin and cilantro. I did this to make my own sauce instead of using canned soup. I also poured some red enchilada sauce over the top then cheese.

Crazy Chocolate Cake

The cake was moist and fluffy and very easy to make. It seemed to be missing a little something though...maybe I would try it again with a couple of eggs or some milk instead of water??

Amish Breakfast Casserole

This will be our new favorite breakfast casserole recipe. We wanted something that didn't use bread or canned soup and this fit the bill. We did substitute bob evans zesty sausage for the bacon. Added tsp salt, garlic,and onion powder. Great meal!

Slow Cooker Stuffing

LOVED IT! --yes--I read all 200+ reviews before I made it. The issue with the ammount of broth does depend on the kind of bread you use. Use less for fresh bread and more for store bought hard packaged. I used the packaged and used all the broth. I think taking the time to mix it thourghly to absorb the liquid is essential also. I also got the feeling it was on edge of being over cooked, so I skipped the 45 min high setting and I put the crock pot on Low for 4 hours and it was perfect.

Fluffy Peanut Butter Pie

Very yummy. Was like a mousse. Not overy sweet either. I did miss out on the recipes original crust. I got lazy and used a ready-made shortbread crust which I thought complimented perfectly well.

Cha Cha's White Chicken Chili

ABSOLUTELY DELICIOUS!! Very different and original. We talked about how good it was non-stop. The only changes made were I used a crock pot. I like soups that simmer for a while for more infusion of flavors. I did sautee the onion first, but put small cut up pieces of raw chicken in the pot. I pre-cooked a heaping tablespoon of flour in broth to add- to thicken it-because it was a little too soupy for our tastes. Following the other reviewers advice, I just used the green chili's and skipped the jalepeno's and it had the perfect amount of spice., and we do like spicey, Cooked on high 2 hours.
