Cocktail Meatballs IV

Reviewed: Oct. 15, 2007
I was afraid of it being too sweet. I felt I had to tweak it to make it taste good. My final recipe turned out to be 1-jar chili sauce 2 oz low sugar grape jelly 1 small can tomato paste 1-teasp. onion powder 2 tbsp dijon mustard Used thawed premade frozen meatballs in crockpot on low for 3 hours. Everyone at the party said they were really good, none were left.

Stuffed Mushrooms I

Reviewed: Aug. 7, 2007
I liked these quite well. I liked that this recipe did not have chopped up stems in the stuffing....I dont see the point of stuffing a mushroom with MORE mushroom. I have never made stuffed mushrooms before- and simply purchased a box of mushrooms which was not good. The small mushrooms are VERY difficult to work with. Best to go to a market where you can hand pick the larger ones, because the stems pop out easier.

Stuffed Shells II

Reviewed: Mar. 22, 2007
First I added an egg- which bound the ingredients together better. I also added a little parmesan and mozzerella which also helped hold everything together. I was feeling too lazy to sautee an onion so I just put a small can of mushrooms in instead.

Pepe Vandel's Spaghetti Sauce

Reviewed: Mar. 22, 2007
I ended up using a little extra spice, and I think using olive oil as your oil will give it a more authentic flavor.

Chicken Tacos

Can be 5 stars with a little tweeking. What I did different was to marinate my chicken in tomato sauce, lime, and olive oil mixed with taco seasoning. Then pan seared. It was delicious.

Ranch Pasta Salad

Reviewed: Mar. 13, 2007
I have had good luck with using sour cream in cold pasta salads before. So I used sour cream mixed with a dry ranch dressing package which worked nice. I also added some finely chopped red pepper.

Italian Bread Using a Bread Machine

Reviewed: Mar. 7, 2007
I took the advice of others and kept seperated- the sugar and yeast with the water, and mixed the salt with the flour. If you don't use salt your bread will taste very bland. I had to add a little more water than the recipe called for also. It turned out GREAT. Also a fun thing to do for partys is make two long skinny loaves and cut them in small slices perfect for bite sized dipping in olive oil.

Italian Herb Infused Olive Oil

Reviewed: Mar. 4, 2007
I wanted some dipping oil for bread I was making now. So I used all dried herbs and let them soak in the oil in a covered bowl for two hours and it was pretty tasty. Nice for a small ammount and a hurry and the herbs started to swell up from soaking making it look more like fresh.
