Portobello Penne Pasta Casserole

Phenomenal. I used margarine and it turned out delicious (almost substituted butter but I had more margarine and needed to use it). I used one bag of fresh spinach, boiled in 1" boiling water with lid on for one minute. Mixed it all together, divided between two 8x8 glass pans (one for now, one for later..) and baked at 350 for 15 min, sprinkled a minute of breadcrumbs and Parmesan cheese on top and baked for another 5-10 min. Delicious!! The baby asked for seconds!!

Brownie Biscotti

First time making biscotti and these were very easy and fun! Delicious. I made them a little bigger so when it came to the baking after the cut, I baked at 250 on each side until it became dry enough it felt like biscotti. 20-30 min at least, rotated every 10 minutes.

Black Bean Turkey Burgers

I left out the Parmesan, used an entire can of black beans and used plain bread crumbs instead of Pablo, but they were GREAT! Even approved by my very picky 9 y/o daughter. Will definitely be making again as our family makes better food choices! (I topped with mozzarella and avocado.. yum!)

Party Chicken Salad

Made it just as the recipe says. It's soooooooo delicious! A hit at my party. Now I eat itby the spoonful lol. Can't imagine deviating one bit. The curry is splendid and the green grapes turned out to be the perfect sweet contrast. Will definitely make again!

Easy Chocolate Chip Pound Cake

Man this cake is good. Used it for a car-shaped cake as well as the top of my son's first birthday car cake. The cake itself is not as dense and I would have liked -- was difficult to carve even when frozen. But the taste is phenomenal.

Whipping Cream Pound Cake

This was okay. It turned out dry for me, but great for carving. I sculpted the hills for my son's 1st birthday car cake. Probably would use this again, but may use an extra bit of something to make it more moist, without wanting to grab a glass of milk :-(. Hoping freezing it increases the moisture and it's a good leftover cake.

Whoopie Pies I

Original recipe is really good. I had to end up adding a spoonful more shortening in the end, but perfect consistency frosting. Did have some stiffness to it so there wasn't too much mush with biting. My daughter loved the "cookies", even without the frosting. One cookie definitely satisfies! So much for that trip to the gym this morning...

White Chip Chocolate Cookies

I listened to a previous review and increased the flour to 2 1/4 cups and I halved brown and white sugar -- did 3/4C and 3/4C of each. I used one stick of unsalted butter and one stick of margarine, then added 1/2t of salt. Cooked at 10 minutes, the cookies came out rather cakey, and I like chewy cookies. Maybe baking them for less time will work better. Pulling out my last batch in three minutes.

Rick's Special Buttercream Frosting

This frosting was amazing. I used it for my daughter's second birthday cake (pictures posted) and it worked out amazingly. I kept the 8 cups of confectioners sugar, and split the 2 cups of crisco to one cup crisco with one cup unsalted butter (two sticks). It turned out A-MA-ZING. I will never use anything different! Thank you for making this cake a success for me!

Meat Marinade

I loooooove this marinade. Didn't have all lemon juice so I used about 1/3 lemon and 2/3 lime, and it turned out delicious! My favorite by far, I made it with the Caramelized Onion Pork Chops!

I used Griffin's pancake syrup and they came out just great! But if you have real maple syrup, it would probably really do wonders for the taste! These are soo good I'm addicted now!

Red Enchilada Sauce

Very good combination of spices and turned out VERY good. Made the kitchen smell like heaven. I served it on chicken enchiladas at a wedding rehearsal dinner and everyone ate them up!

Sooo good on chicken enchiladas. Served at a wedding rehearsal dinner and got terrific compliments! The white ones were gone first :) Cook the sauce on simmer for a long time to get it nice and thick.

Easy Chicken Enchiladas

I have made this dish several times at home, for Sunday family dinner, even in bulk at a wedding rehearsal dinner. I have had nothing but good compliments. I did this with homemade white and red sauce in addition to the cheese on top and everyone loves it!
