Irish Stew

I've said it before and it still holds true: this recipe is my gold standard for Irish stew. I made it for St. Patrick's Day dinner this weekend, and my family ate every bit--even the parsnips. Of course, I didn't tell them about the parsnips until later. Now they know they like 'em! Just a couple of notes: next time I'll cook a big chunk of parsnip and carrot with the lamb, but I'll add fresh parsnip and carrot later on so they won't disintegrate. Also, I sear the meat in batches and skim the stew as it simmers. Thanks for a great recipe, Ita!

Hunza Bread II

My friend the baking queen suggested I use this recipe to make hot cross buns this Easter. She also suggested icing them with a simple mixture of powdered sugar and freshly squeezed orange juice. So I did. My son said they were like eating pillows. I'm sure he meant warm, sweet pillows stuffed with currants. Because that's what I'M talking about! Just a note: I portioned the dough into 2-oz rolls, brushed them with an egg wash, and baked them for 20 minutes @ 350 degrees F. Perfect!

Minnesota Broccoli Salad

Here's how much my family liked this salad. My son didn't touch the portion on his plate until I urged him to have a bite. So he did. "Oh," he said after his first bite. "OH!" he said after his second bite. "This is really good!" he said, as he shoveled broccoli salad into his mouth. "Can I have some more?" he said. My husband ate two helpings of salad and said things like, "So is this the official Minnesota State Dish?" So yes, this is a winner. Thanks for the recipe!

Crispy Rosemary Chicken and Fries

Sometimes on a rainy fall evening, on an icky train ride home, you just start longing for the comforting aroma of a homemade chicken dinner instead of, say, your damp and sullen seatmate. And sure enough, this chicken/rosemary/garlic combo made my nose practically leap off my face with joy. And the flavor! And the gorgeousness! I seriously love this recipe. Can you tell?

Simple Garlic Shrimp

I made it as written and I really wouldn't change a thing. Mincing the garlic so it was very fine seemed to eliminate that bite of raw garlic that I'd feared because it really doesn't cook very long. After I removed the shrimp from the pan, I tossed 8 ounces of cooked linguine in the pan sauce, then added the shrimp before serving. The whole dish took just minutes to make. The shrimp were cooked perfectly and the sauce was so delicious. I served it to guests with a side dish of roasted asparagus and cherry tomatoes for a simple, elegant summer dinner. Irish Soda Bread

Is it authentically Irish? Who cares? It's authentically delicious and very easy to make. I used currents instead of raisins because that's what I had, and baked it in a buttered cake pan lined on the bottom with parchment paper. Will I wait until next St. Patrick's Day to make this again? Heck, I'm not sure I can wait until next week!

Rum Cake I

This was the perfect ending of today's Cuban feast. It was so perfect, I had to have two pieces (one with whipped cream and one without) just to make sure I was experiencing real perfection and not a mere facsimile thereof. And to think I used to turn my nose up at boxed cake mix! This recipe certainly elevates the convenient to the sphere of the divine. (That's the rum talking.)

Bob's Teriyaki Sauce and Marinade

Seriously, this is the real deal. Just the way Mom used to make it when we lived in Japan. Don't try to substitute dried ginger because it just doesn't give you that bright hit of fresh ginger flavor. And when you do the cornstarch thickener, make sure your water is cold when you mix it in. Thanks for a good recipe, Bob!

Tangy Turkey and Swiss Sandwiches

I could eat these sandwiches every week. I guess that means I'd have to roast a turkey every week. Hey, if that's what it takes. What I loved: the crispy bread and the melting cheese and that flavorful mayo and the ripe tomatoes and the sharp onion. This is a keeper. I'm going to try this with different cheeses, too. Brie? Havarti? Irish cheddar?
