We had these with the Ulster Fry-Up, and although I had told myself beforehand that I'd have only one wedge, I ate so many that I'd hate to admit to the actual count. Fantastic!

Irish Champ

Rich, creamy, and so delicious! Exactly right for our St. Patrick's Day dinners. I've served this with lamb stew, with corned beef and cabbage, and most recently with roasted salmon. I use cream instead of milk (oh my heart) and I let the scallions and cream seethe gently until the scallions soften. Comfort food with an Irish accent indeed!

Ferg's Ulster Fry-up

When this breakfast started frying up, the crowds came running. Then they started jostling each other to get to the goods. Everything looked, smelled, and tasted sooooo amazing! I didn't wash it down with a pint of Guiness...an excellent coffee had to do. Could I eat this every day? Sure! But I'd have fewer days in the long run, and I'd have to run 10 miles a day to work off the calories. It will have to be a once-in-a-while treat. But what a treat!

Breaded Rib Roast

That was one delicious roast! Perfectly cooked. Tender. Flavorful. And beautiful to behold. I longed only for a dab of horseradish on the side. This is now saved to my recipe box!

Irish Stew

I've said it before and it still holds true: this recipe is my gold standard for Irish stew. I made it for St. Patrick's Day dinner this weekend, and my family ate every bit--even the parsnips. Of course, I didn't tell them about the parsnips until later. Now they know they like 'em! Just a couple of notes: next time I'll cook a big chunk of parsnip and carrot with the lamb, but I'll add fresh parsnip and carrot later on so they won't disintegrate. Also, I sear the meat in batches and skim the stew as it simmers. Thanks for a great recipe, Ita!
