Megan's Granola

Delicious! I didn't have some of the add ons like flax and I did omit oil and replaced with mashed ripe banana. Chocolate chips, craisins, raisins, walnuts, almond slivers and the result was a banana chocolate deliciousness! I did add in flaxseed meal as well. The calories are lower by omitting the oil and because I had no sunflower seeds, wheat germ, pecans ... I think the calories were much lower. Anyway you make it it's great.

Big Soft Ginger Cookies

These are DELICIOUS! I followed directions with the exception of 1/4 cup butter and 1/2 butter flavored Crisco and substituted the sugar for Splenda/sugar blend. These were NOT sticky at all. I see some reviews stating they used shortening and did not have sticky dough so maybe that it the key? I used a teaspoon and made small balls about 1.5 - 2 inches across which was rolled in sugar I colored red and green. I then flattened them out with a fork and they were then about 2" across. I baked for just over 7 min and for people who like crispy ginger cookies these are PERFECT! Crispy outside and a bit soft on the inside. Super easy. I'm not an expert either....

Juicy Roasted Chicken

wow! I cook a lot and this is an awesome way to cook a chicken. Whoever says it isn't flavorful, either isnt seasoning enough OR is so used to supermarket roast chicken that they forget what a good basic roast chicken taste like. I followed directions but did add some things i know I like.... I stuffed it with the celery and also a clove of garlic and an apple, I put butter and chopped garlice under the breast skin and rubbed a pat of butter on the chicken. I also used garlic salt in addition to the other spices. My bird was 7lbs and I cooked for 2.5 hours and let it sit a half hour. With 45 min left in cooking I added cut up potato drizzled with evoo and sprinkled wth herbs de province. After I took the chicken out I put the potaots back in for 15 min and shut the oven off and let them crisp. Before serving, I stuck the chicken under the broiler for about 90 seconds to crisp up the skin. This was SOOOO moist! Thank you thank you! Oh I almost forgot, I sliced an onion and cooked the chicken up on the rings so the juices would flow under it making it easier for basting. I then took the juices and scrapings in a fry pan and brought it to simmer adding chicken broth and a tblsp of flour and mushrooms. What a delicious gravy!

Clam Sauce with Linguine

Delicious. Halved the butter, and used about a tblsp of evoo, added fresh basil.... DELICIOUS! ALSO- I used one can whole clams and 2 cans minced. Add some crushed red pepper. Oh my..... on dreamfields pasta!

Pesto Chicken Florentine

LOVE this! I made my own Alfredo from a basic recipe on this site and added lots of fresh garlic to that. I also added mushrooms at the very end of cooking the spinach down. My family LOVED this... I dont understand the 3 stars people... the pesto in the sauce is wonderful. If you know how to cook then you know what spices to add to your liking. Thanks for the recipe!! I just want to add - use Dreamfields low carb pasta for a crazy delicious low carb dinner!!

Baked Kale Chips

delicious and so easy!! Took one persons tip to put it all in a bag to mix it. I did add too much salt but that was my fault. The only change was added cayenne pepper and when the 15 minutes was done I opened the oven door and let it sit 5 minutes then shut the door and forgot about them. 3 days later they are still super crispy. SO GOOD.

Chewy Chocolate Chip Oatmeal Cookies

excellent!! I try to stay a tiny bit healthy so I used half butter and half coconut oil and half whole wheat flour half regular flour (up it to 2 cups and also doubled baking soda). These were SO good! Used a melon scoper to get perfect little balls of dough and they made perfectly circle cookies. NO idea how some people ended up with flat cookies. Thanks for the recipe.

Slow Cooker Chicken Cacciatore

My 4 yo daughter and Hubby LOVED this! First let me say - if you are any sort of a cook, this won't be bland as you'd know you would add your own spices to your liking. That being said - I used a plain Trader Joes sauce with no flavoring. I added salt and pepper to my chicken breasts and rubbed it in before putting them in the crock pot. Then I added all ingredients (except I used sweet red bell peppers... makes a HUGE difference) PLUS italian seasoning, garlic powder, chili pepper flakes. 5 hours later when it was done, I took out the chicken breasts, shredded them (SO easy) and put them back. I added some green olive juice (I didnt have enough olives to put in but wanted the flavor) and let it cook another half hour. It was delicious! Served over ziti. It was just like piccata I have eaten out. I dont think I have ever had it with a huge chunk of chicken. The shredding made it easy for my daughter to eat and got the flavor into the chicken peices. Thank you for the healthy recipe!

Broccoli Chicken Fettuccini Alfredo

I found this really good! For all the people out there that said it was tasteless or whatever, if you have ever made real alfredo you know what goes into it. So make changes to this base recipe accordingly! I added a bit of sour cream, chopped mushrooms, salt, pepper and lots garlic. I also used cream instead of milk. This was Delicious!

Banana Cream Pie I

oh my goodness! DELICIOUS! The only change I made was substitute milk for equal parts heavy cream and fat free half and half. Used3 tblsp cornstarch, no baking. This was so good! Set up perfectly. As a first time pudding maker - I knew right away when it was done cooking - it gets thick. Do not pour into pir shell until it is visibly thick. YUM!

Best Big, Fat, Chewy Chocolate Chip Cookie

oh my GOODNESS! Made these twice in two days...once as a test for the hubby's co-workers and after the ok again today. They are so GOOD!! I followed exactly - refigerated 20 min or so and used a smaller size ice cream scoop to give me more cookies. The first batch today had a slight mishap - the oven somehow was bumped to about 425 and the cookies were done in like 10 min. I thought they looked burnt but they were SO good... crunchy on top and bottom with bits of crunchy chocolate chip and a very moist almost raw inside. Cooked just enough. Thanks for the recipe!!! 01/9/12 update... Made again today. Used butter flavored shortening as I ran out of butter. Did NOT refrigerate. Added walnuts. They came out PERFECT! Nice little mounds of gooey yummy cookies. Not sure why all of yours fell flat. This is my 3 rd time and all have been perfect.

Candied Kielbasa

delicious!! Cooked in the oven in a 9x13 pan. I cooked for 90 min stirring after 30 min and every 30 min thereafter. Next time I will use a smaller dish as these turned out very delicious but a tad chewy on the ones not soaked in sauce. Added a little bit of bbq sauce, a splash of hot sauce and a bit mroe saurkraut.

Sugar Free Brownies

Ok - I am not diabetic but do try and eat low carb. That being said - I made a couple changes that made these pretty good! I took one packet of SF choc pudding and put it into the 1 cup measuring cup. I then made up for most of the difference with Splenda but did add .25 cup sugar (for sweetness) I also added mint choc chips and I used a stand mixer with a whip to fluff it up. I then sprinkled coconut on top. YUMMY... very dense and cake like.

Apple Banana Cupcakes

Delicious!! I try to not substitute ingredients as I feel that after altering them you cannot really give an honest review but this time I had to! The changes I made were - sub applesauce for the shortening, used splenda instead of sugar and I added raisins and cinnamon chips ... oh my they are great!! But not cupcake like - more very moist little muffins. Thanks so much!
