Smoky Black Bean Burgers

These were really really yummy! I wanted to double the batch for lunches, but only had 1 can of black beans, so I added a can of red kidney beans as well. And then, because I had "scraps" left over from another meal, I added finely minced onion, green and red peppers, and mushrooms. Cooked in my cast iron skillet, these were easy, held together well, and very tasty! Thanks for a great recipe!

Tasty Buns

Holy cow, these were good! I did the whole thing in my KitchenAid, which made it super easy and fast. They rose well with the listed amount of yeast. I used white whole wheat flour, which made them a bit more "robust" than a white roll, but they were still amazingly good. We used them as hamburger buns and as sweet rolls (cut open with butter, brown sugar and cinnamon spread on them). My husband and I had to box them up and ban ourselves from the kitchen so we didn't eat them all! Thanks so much for an awesome recipe!

Zucchini Bread

This was a wonderful recipe! My husband has never had zucchini bread and was a bit skeptical until he tried this. I did make some changes, based on what I had on hand and personal preferences. I used roughly 3/4 c white and 3/4 c brown sugar- which made it plenty sweet enough. I used almost 3.5 c zucchini and it was not too much (even for the zucchini-hating hubby). I didn't drain the zucchini and it worked just fine. I used 1/2 c berry flavored applesauce (no regular on hand) and 1/2 c oil... perfect texture! I didn't have choc chips, so I used about 1.5 c of orange-flavored cranberries and about 1/4 c pecan pieces. It was sooooo good! Mini muffins baked in about 20-ish minutes and medium loaf in about 45 minutes. It's been requested for when the in-laws visit :-) Thank you so much for a wonderful and obviously adaptable recipe!

Easy Pudding Cookies

Awesome! Easy! I subbed 1 cup oatmeal for the white chocolate just because that's what we prefer and used spelt flour because that was what I had on hand. They were fast and really hit the spot. Yum!

Kentucky Biscuits

These biscuits were delicious. I do have one suggestion- sub half (one cup) of self-rising flour for the all-purpose flour to make them super fluffy. They are too delicate for biscuit sandwiches, but are wonderful anyway. Next time I will probably add some herbs or spices for a little extra flavor kick. All said, I believe I have FINALLY found my perfect, go-to biscuit recipe. Yum!

Vegetarian Stuffed Red Bell Peppers

We changed this recipe around a little bit. First we subbed quinoa with Israeli Couscous, however misjudged the yield on the couscous (1&1/3 cup - Standard at Trader Joe's) will probably fill 4-6 peppers. The couscous has a little more rewarding texture than quinoa. We also cooked the couscous in vegetable stock for more flavor. Also, I couldn't find green onions tonight, so I used chives, and they seemed to work well. With the added yield of the couscous, we doubled the tomatoes and apples. and lime juice. We also left out the mint. That said, this dish was absolutely excellent. The flavors just sort of jump out and are literally mouth watering. My boyfriend says it's the sort of thing that makes him think he could be vegetarian too. Since we had so much filling, there was enough to bake and eat without the peppers - very yummy!
