Carrot Cookies

I need to eat more carrots for dietary reasons so i tried this recipe and have mixed feelings about it. The base recipe is mediocre, however with some very helpful modifications as offered by other reviewers and a few of my own, it's perfect for what I wanted. It's lightly sweet. Here's my changes: 3/4 cup of butter (instead of shortening) 1/4 cup of vegetable oil (instead of shortening) 2/3 cup of carrot pulp from the juicer (instead of grated carrots) 2/3 cup of apple pulp from the juicer (instead of grated carrots) 1 cup of quick cooking oats 1 1/4 cup of sugar (instead of just 3/4 cup) The apples add a nice sweetness to it so you don't need a full 1.5 cups of sugar. I don't really like shortening, and much prefer butter, but a full 2 sticks of butter made it way too buttery. There is also only a hint of carrot. If you want the carrot flavor to be stronger, replace the apple pulp with carrot pulp.

Campbell's Kitchen Vegetable Lasagna

this turned out really well after i slightly modified the recipe to my own liking. instead of using the prego sauce i made my own from diced tomatoes, brown sugar, oregano, tomato paste, salt, pepper, onions and garlic. i also added chopped spinach (defrosted). i made it along with a meat lasagna for a bunch of meat loving friends. and everyone thought they were both exceptional!

Blackened Prime Rib

i make 1 or 2 of these for large parties and all the guys always come back for more... but sometimes prime rib is a little out of my price range so i use a bottom round and that works out great too!

i really like this recipe alot for the summer! some friends are allergic to shellfish so i replace with some grilled chicken breast or some lean ground turkey. it's always a hit!

everyone i've ever made this for raves about it... it's got alot of calories and alot of well...everything they say is bad for you...but heck..it tastes so darn good who gives a hoot! just don't eat it every day =P
