Chicken Tikka Masala

Mmm, so good! I entertained with this dish twice in two weeks, and it was an impressive hit. You can eyeball the ingredients and adjust easily for larger crowds. For the cream sauce, I used a large can of diced tomatoes with half-and-half, and it was delicious. Even without all the spices listed (no ginger), it was delicious with many layers of spices going on without being "hot spicy". The yogurt marinade was very fast to make and makes the chicken so tender and tasty! Also, I don't own a grill, so I just heated up the frying pan and placed the chicken pieces in there until they were cooked through. Served on top of white rice, it was very filling. Kitty Litter Cake

As with other posters, this cake was the Hallowe'en highlight at my office last year. People were howling with laughter and wincing with disgust. Only a few braves males (plus me!) tried it, a few took pictures, definitely a hit. And it tasted great, and the leftovers lasted FOREVER! Definitely try this--even when baked in a normal cake pan without plastic liner, the effect is unforgettable and will become the stuff of legend!

Dump Bars

This recipe has a permanent place in my recipe holder. Even when my family was in the process of moving, I could fix up a pan of these for a craving, because the ingredients are so simple. I've also decorated a pan as a cemetary for hallowe'en, with short bread tombstones. Versatile easy recipe!

Awesome Carrot Cake with Cream Cheese Frosting

I've been making this carrot cake for a few years, and it is always dependable and SO GOOD! I make it withough any nuts or fruit, and it makes a nice big, moist carrot cake. Spouse's job is to peel and grate carrots while I prepare the rest; saves time and my knuckles!

Kim's Ultimate Meatloaf

Delicious for my first turkey meatloaf! Since I didn't have much meat on hand, I added lots of steamed carrots and peas to bulk it up. I used half white vinegar-half balsamic vinaigrette for the sauce topping and the whole thing was scrumptious!
