Brown Sugar Meatloaf

Reviewed: Feb. 23, 2010
Very good- I substituted oats for the cracker crumbs- a healthier fiber filled option without sacrificing any taste.

Asian Orange Chicken

Awesome! I used my FryDaddy for very authentic restaurant results. Served over sticky rice and a stir fry made with store-bought broccoli slaw, mushrooms, asparagus tips, and red pepper strips. Truly, truly a yummy dinner that wowed my family (and me) :-))))))

Crazy Cake

Fabulous, moist, flavorful cake... super easy to make... easier than cake mix, but SO much more delicious. I used the Sturdy Whipped Cream Frosting- perfect!

Pearl Baked Cream Onions

Reviewed: Dec. 24, 2009
FANTASTIC. I used fresh peal onions and followed package instructions (par boil 3 minutes, rinse, cut both ends and peel outer layer off) then proceeded with recipe exactly as written. I made it in a gratin dish and it looked positively inviting. It didn't disappoint! Served it with a cross rib roast and mashed sweet potatoes (the combo of this dish and the mashed sweet potatoes was out of this world on the plate) for Christmas dinner.

Oven Baked BBQ Ribs

Reviewed: Dec. 17, 2009
This sauce is superb. I only had beef ribs so I boiled beef ribs for 20 minutes, poured half the sauce over ribs and bake 15 mins in 425 oven, pour rest of sauce over and bake 15 more. Fork tender lovin' from the oven. It will not disappoint.

I have found my new favorite dressing! Next time I'll cut down the sugar a tad, but WOW. I LOVE IT!!!

London Broil I

Reviewed: Sep. 28, 2009
I used previous suggestion and added Balsamic Vinegar (about 1/4 cup) and used Oyster Sauce instead of Soy Sauce- which makes the marinade thicker and allows it to really adhere to the meat surface. (Don't spend $4 on Oyster Sauce at the grocery store, you can get it at the Dollar Store). Truly delicious marinade-

Supreme Scalloped Potatoes

Reviewed: Jan. 17, 2009
Great flavor- the recipe instructions made no sense though (how does one cook, THEN shred potatoes?) I used the ingredients and made this dish the traditional way- thinly slice raw potatoes, layer them with the wet ingredients and cheese then bake for 1.5 hours. Thinly sliced green onions makes a nice little topper.

Downeast Maine Pumpkin Bread

Reviewed: Dec. 17, 2008
Excellent! This recipe made six mini-loafs. I'm going to give a few away and freeze a couple. I didn't change a thing and it was fantabulous.

Marinated Baked Pork Chops

Reviewed: Dec. 15, 2008
This was ok... I thought the chops "boiled" in the sauce and didn't have an appealing look to them. About the only thing that saved it was that I made a quick reduction of 2 tblsp. butter, 2 tsp. brandy and 1 tblsp orange juice concentrate. I poured it over the chops and it saved the dish.

Slow Smoked Pork Spareribs

Reviewed: Nov. 20, 2008
Excellent- This came out well without all the time vested into it- I'm sure it would be amazing with the smoker. But, I don't have a smoker so I dry-rubbed the meat (which was, incidentally, mostly frozen) and then grilled it, basting the meat with the sauce. It came out fantastic and our guests loved it.

Soft Oatmeal Cookies

Reviewed: Oct. 10, 2008
Excellent- the structure of the cookie was soft and moist- really ideal. I added a few handfulls of raisins, 1 tsp allspice and 1/2 tsp nutmeg. I also like big cookies, so I used 1/4 cup as my scoop and baked 15 minutes.

Sea Bass Cuban Style

Fantastic! Because they were available, and it was convenient, I added pencil thin asparagus spears to the pan when I added the fish- it was superb!

Sour Cream Frosting

Reviewed: May 23, 2008
This wasn't half-bad. I used it over cinnamon rolls because I didn't have cream cheese for the frosting. It worked and the rolls are gone- job done!

Sweet Dinner Rolls

Reviewed: May 23, 2008
Excellent- I used half the batch for dinner rolls (about six balls of dough- enough for dinner) and rolled out the rest for cinnamon rolls- enough for dessert.

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Apr. 28, 2008
Too much oil! I (foolishly) didn't read the reviews because it had near perfect ratings. My daughter was the one who scrolled down and asked if I had read the reviews about the oil- right after I dumped the oil in the batter! The cake really tasted oily and it would've been just great with HALF the oil.

Sausage Pasta

Reviewed: Jan. 29, 2008
In response to the previous poster who asked how the sausage should be prepared: my recommendation is to remove the casing- especially if you're serving it to kids. If you don't remove the casing, it could roll back while cooking the sausage pieces and you'll get the inevitable question from your kids, "What's this?" then "What's it made out of?" then "Ewww!" Best bet: use frozen sausages, thaw very lightly in the microwave, then use a sharp knife to cut membrane and remove.

Pepperoni Stuffed Mushrooms

Reviewed: Jan. 7, 2008
I made these for our Christmas Eve celebration and they were a hit. I used the gigantic stuffing mushrooms from Costco, which made for a showy platter. Instead of butter crackers I used French's Fried Onions (Cheddar flavored) and whirled them up to crumbs in my mini processor... I believed this really added that special somethin' somethin' to what was an already fantastic appetizer. Bravo, Koalagirl, for providing an excellent appetizer recipe!
