Chicken Marsala II

I have made this recipe several times. I am giving it 5 stars even though I changed it for what I believe is better. I omitted the bacon (love bacon, but don't think it is needed) and I doubled the amount of wine to make more sauce. Easy and very good!

West African Vegetable Stew

A keeper! One of the best recipes I have even found on this site. I veered slightly off the recipe and added more raisins, used canned tomatoes and frozen spinach as that was what I had (I'm sure fresh is better but this was a great dish for a rainy night.) Absolutely delicious with short grain brown rice -- and very healthy as well. Yummy and filling. Can't wait to make it again!

Quick and Easy Chicken Noodle Soup

Great recipe. I did not have celery but added lots of fresh chopped flat leaf parsley near the end and also added a few handfuls of sliced white mushrooms. It was a hit!

Slow-Cooker Chicken Tortilla Soup

This is a really good recipe. The only reason it only got 4 stars is that I changed it slightly. Instead of the enchilada sauce and whole canned tomatoes, I substituted one 28 oz can of crushed tomatoes (healthier -less sugar), used a can of Trader Joe's canned corn (not drained) instead of frozen corn and added the cilantro as a garnish. Absolutely de-lish!!!

My Favorite Sesame Noodles

This was yummy -- it deserves 4.5 stars. Adapted it a bit, based on what I had on hand. Used a chili sesame oil and added a couple of shakes of Tabasco and added fresh cilantro. I felt that it was not enough "sauce," so I doubled the amount.

Orange Pork Chops with Tarragon

This very simple recipe is lovely. I read other review and agree that more orange juice is key (a added a cup) and I used fresh tarragon (about 2 teaspoons.) As the sauce was thickening, a dash of cayenne pepper, a teaspoon of orange zest and a 1/2 tsp of sugar really enhanced the favor. It was a hit -- thanks!

Waldorf Salad with Walnut Oil Vinaigrette

This sounded good and did not disappoint. A refreshing counterpoint to the usual gloppy, calorie-laden version. SunMaid has a product that is a trio of different raisins, and it was nice to have the variety. I only had Gala Apples and it still had a good flavor. Love the crunch! This will be a must for the holidays as it's a departure from heavyhanded side dishes. Also, great to serve for vegetarians or vegans.
