Lighter Banana Muffins

I'm rating these 5 stars because if you bake them according to the suggestions of several reviewers-including myself-they are quite nice! I, actually, enjoy the texture of low fat muffins as they are not so "cupcake" like. It feels like a healthy breakfast and not a dessert, you know? If you enjoy the cakey texture of a high fat muffin, I don't think these muffins will suit your liking. They taste perfect for a low fat muffin. Believe me, I know a low fat muffin disaster and these are FAR from that. They have all the redeeming qualities of a good low fat muffin. They rose beautifully, taste great, have a hearty but not dry texture, and they look pretty. Just don't omit the extra banana or milk and you're good to go!

Supreme Strawberry Topping

Oh my goodness! Hands down-this is the most divine strawberry sauce that will pass your lips. It's heavenly. I'm using mine over pound cake. YUMMMMMM!

Sugarless Banana Walnut Cake

I have to say this is a very nice recipe. I used mostly whole wheat flour, an entire cup of bananas, and baked it for about 40 minutes (more bananas made it extra moist which required more baking time). I also used two eggs and one egg white. When it was cooled, I ate it with a bit of peanut butter and it made an excellent snack. The cake is very banana-y and moist. I will make this one again. Didn't miss the sugar at all.

Eggplant Parmesan II

Terrific! We ate it as sandwiches on toasted whole grain french bread. I used far less cheese than what was called for-just to keep it lighter. Wonderful recipe.

Cinnamon Cranraisin Bread

this recipe is almost flawless. I did have to add a bit more flour to make it less sticky-maybe 1/4 cup. I use part whole wheat and part bread flour. I also pureed the raisins before hand so my 4 yr old would still get the fiber without noticing any raisins. My loaf came out beautiful and I always brush mine with melted butter after removing from the pan to keep the crust soft and add sheen.

Chantal's New York Cheesecake

This truly is the perfect cheesecake recipe. I subbed Bailey's for milk and added 1/2 cup chocolate chips over the crust and 1/2 cup chips on top of the cake. I used a waterbath and would strongly recommend adding more butter to the crust. I used a stick. The crumbs don't hold together without all that buttery goodness. I will never EVER trust another cheesecake recipe. This is THE BEST.

Cherry Snowballs

I made these last year on a whim because the original "cherry snowball" recipe I was going to use turned out to be a bust. These-on the other hand-were spectacular. Perfect holiday cookie. I got so many compliments on these cookies that I decided I'm going to make them every year. I didn't change a thing. GREAT holiday cookie!
