Eggs Benedict with Salmon

The prep and cook time are overestimated in this recipe. It was so easy to prepare but tasted as though it had taken much longer. I didn't use capers for garnish but rather used chopped cherry tomatoes. I think this really added to the dish and I highly recommend it.

Tuna Italiano

My husband and I loved this quick, simple, filling, healthy, and convenient dish. For that I feel it deserves a great review! I drained the tuna in oil, added extra garlic, and would recommend cutting back on the added salt. I also added red pepper flakes and a few sprinkles of italian seasoning.

Apple Goat Cheese Bruschetta

I would give this 4.5 stars for ease and simplicity. I agree with the other reviews that the fresh herbs make this app. I followed the recipe exactly except for spreading some olive oil over the bread prior to broiling which I would probably do again. Thanks for the tasty and unique recipe!

Smooth and Cheesy Omelet

Delicious and healthy! I'm always looking for more ways to use cottage cheese and this was a great idea. I did not find the olive oil to be necessary and used just a tad. I used fresh mushrooms and added red onion and green peppers. Loved the simple addition of basil, and I imagine this would have been even better if using fresh basil. I was worried about it not having enough seasoning and made the mistake of adding salt to the veggies. I forgot how salty cottage cheese is on its own. I contemplated adding garlic because I love it, but didn't. Overall, I thought the veggies, jalapeno, basil, and black pepper gave this enough taste. I also used egg beaters which worked just fine. Thanks for the great recipe to start my day!

Cottage Cheese Pancakes

This was very easy and a nice change of pace. I am always looking for more ways to incorporate low fat cottage cheese into my diet, as it's a great source of protein. You can't expect these to taste like traditional pancakes. I too substituted whole wheat flour, applesauce for oil, and egg beaters for eggs. I added baking powder, sugar, cinnamon, and vanilla based on others reviews. Topped with syrup, these were great!

Fruity Curry Chicken Salad

This was awesome! I definitely agree with the tip to refrigerate for at least a day before serving to let the flavors develop. The curry adds a pleasantly unique flavor to this chicken salad. I used walnuts in place of pecans and craisins in place of raisins which both worked beautifully. I underestimated the prep time in terms of chopping everything, but it was definitely worth it. Will probably make again for guests, showers, potlucks, etc.

The Really Good Salad Recipe with Pieces of Fruit

This salad was amazing and I had 3 other guests who agreed. I was hesitant about all of these fruits together in one salad but it was wonderful. Don't change a thing. The only thing I changed for the time factor was that I used bagged salad (1 1/4 bags of European mix). I think spring mix or romaine would work best. The slightly bitter lettuce combined with the celery and chives balanced out the sweetness perfectly. FYI- on medium heat, my almonds took over 10 minutes to toast and melt the sugar. I also did not make the dressing. I had every intention of a balsamic vinegar and olive oil based dressing from another recipe but I spilled it and then had to use bottled dressing from the fridge. Regardess, it worked great with light balsamic vinegrette and light rasberry balsamic vinegrette.

Caramel Apple Pork Chops

Pleasantly surprised and impressed. I seasoned the pork chops with salt, pepper, garlic powder, and onion powder. I felt that this was crucial to the 5 star outcome. Other than that, I followed the recipe and didn't mind the skillet method (quicker than baking). Left out the oil...totally unnecessary. Used slivered almonds because that is all I had. Don't underestimate the nuts. It really added a lot.

Rosemary Chicken with Orange-Maple Glaze

This was wonderful. I was worried about using my light orange juice and sugar free syrup....but it worked out great. I used pre-cooked refrigerated chicken chunks which made this super easy to prepare. I tossed the chicken in bit of olive oil and the spices and then heated it in the microwave for 30 seconds before I added it to the sauce. I liked this method also because it didnt require the extra butter and olive oil. I served this over angel hair pasta. Of course it was accompanied by the wine that needed to be opened to prepare this ;)

Tender Barbecued Chicken

This was incredibly easy and would definitely recommend it. I used chicken tenderloins (thawed), lemon juice instead of lemons, diet coke, and spicy honey bbq sauce (krafts). It was so tender and juicy. I shredded the chicken and served it sloppy joe style. I used a suggestion to salt and pepper the chicken first and would definitely not use salt again. The bbq sauce adds enough salt.

Slow Cooker Stuffing

This was really good. I made it for Thanksgiving to save on oven room. It was so low maintenance. I started with half of the chicken broth recommended based on other reviews saying it was too moist. However, by the end, I probably added about the amount that the recipe stated and it was perfectly moist. I also used fresh herbs because I had them. And for those afraid of putting mushrooms in like I was, (based on some people not liking mushrooms)...you couldn't even see them in the end...but their flavor helped. The leftovers were even better.

Pumpkin French Toast

I make french toast every week and love pumpkin so this was a must try for me. I doubled the pumpkin and added splenda to the batter. It turned out light and fluffy and was great with powdered sugar on top. Would recommend for something different.

Slow Cooker Buffalo Chicken Sandwiches

For the ease of making this recipe, it was pretty darn good. I cooked the chicken with hot sauce and a mixture of ranch dressing and blue cheese dressing. We didn't have the dried ranch on hand and this worked out fine. This recipe definitely packed some heat though.

Guinness® Bread

This was super! ....moist, flavorful, hearty, and relatively healthy. First of all, I did not use Guinness. I had a Smithwick's on hand so I had to make the best of it. I did not have buttermilk so I used 1 Tbsp of lemon juice mixed with 1c milk and let it sit for 5 min. I used splenda brown sugar mix, light butter, and baked it in an 8x6 pan for ten minutes less than stated. It was perfect and just may have to replace my go-to beer bread recipe from this site (whole wheat beer bread). Loved this this one had oats. Also, I wasn't expecting it to be as sweet as it was and may decrease the sugar next time. Although my sweet tooth can't complain. Thank you for the recipe!

This was reallt good and healthy! I used chicken broth in place of water and 1 cup worked just fine. I did not think it was too dry as others had mentioned. I also used less of the olive oil and omitted the parmesan cheese just because I thought it tasted great without it.

Green Punch

I made this for a St. Patty's Day luncheon at work and I was not disappointed! This was very well received by my coworkers and very refreshing. I did not use the 2 cups of sugar and cannot imagine the recipe with it. It would be too much! In fact, if I made again, I would use sugar free jello and diet ginger ale to save some sugar. Overall, great recipe. Thanks!

Grilled Shrimp and Apple Skewers

This was quite unique and tasty! Since it is winter, I baked these in the oven on skewers at 400 degrees for about 8 minutes. The apples were so tender and the shrimp just right.

Mixed Greens with Mushrooms

I used a prepackaged bag of salad and this was incredibly simple and quick. I omitted the tarragon because I didn't have it but otherwise followed this exactly. I really enjoyed the light but tangy dressing. I loved that it didn't require oil! Will definitely make again. Thanks!

Szechwan Shrimp

This was delicious. I followed the recipe except forgot to buy green onions (it was super tasty without). My fiance and I thought the amount of spice was perfect. I doubled the sauce and served over rice!
