Kelsey's Cheesy Bacon Breasts

My family really liked this. I was using really large chicken breasts, so I used only three and cut them each in half. Then I pounded them a little with a mallet. I probably used less bbq sauce and mustard than the recipe called for - and probably half the cheese. At any rate, this was a very easy recipe, even for a Monday night. We put steamed broccoli and a little cucumber salad on the side. Everyone was satisfied. My husband said it was one of the best things we'd had in a long time. Thanks!

Iced Pumpkin Blondies

Yum! I cut the recipe to 24 servings and baked in a loaf pan. Also, I used whole wheat pastry flour. I decided to forego the icing. One of my seven year old friends suggested I drizzle honey on the finished (and still warm) bars. That was a fantastic idea. Thanks for this recipe!

Asparagus Cashew Rice Pilaf

My family really liked this pilaf. The second time we made it, we didn't have asparagus. So we used peas and broccoli instead. It was very good. I think you can cut the butter in half and still enjoy this dish.

Spinach Brownies

Oh, My! The name scared me, but the taste made me forget all of my fears. I used the two packages of frozen spinach. I squeezed the heck out of it to get every drip of liquid out. The bars set up very nicely as a result. Someone else mentioned something about the onions. I think the next time I'll probably sautee them lightly to bring out the sweetness and cut the "oniony" taste that keeps my kids away from these bars. Thanks!

Avocado Salsa

Absolute Mexican Cornbread
