Fourth of July Potato Salad

I absolutely love this recipe. I purposly make more than I think I need for a party so I will have leftovers. It is a creamy, true potato salad without having a bunch of nonsense ingredients mixed in and skewing the flavor and texture. Gets compliments every time.

Pumpkin-Apple Muffins with Streusel Topping

These are pretty good--the best pumpkin muffin recipe I've tried so far. I subbed extra pumpkin and applesauce for the oil and still got lovely, moist muffins.

Summer Vegetable Ratatouille

I really enjoyed this. I added 1 cup of chicken broth and a small can of tomato paste as another reviewer suggested to make this more palatable for my vegetable-shy boyfriend and he liked it as well. Served it with bread but I might use pasta or rice for the leftovers since it's saucy with add-ins.

Peanut Butter Pie X

This is super easy. I was looking for a pie to use up a pre-made chocolate graham cracker crust and was able to pull the rest of the ingredients from stuff I had on hand. I substituted whipped topping for the whipped cream and I reduced the amount of sugar by 1/4c to compensate for the sweetness of the whipped topping. I will make this again but next time I will reduce the sugar by at least another 1/4c. This is a very sweet, rich pie so if you are serving to guests, think small slices ;-).

Granny Kat's Pumpkin Roll

I made this last year for my BF's family's Thanksgiving dinner. I was asked to bring it this year for both Thanksgiving and Christmas. People are actually disappointed when I make this pumpkin roll and they can't attend the party.

Spinach and Orzo Salad

I used a rotini pasta to fill the dish out a little more and it was pretty good. I served it as a side dish with chicken and then took just the salad for lunch the next day. The spinach was just starting to get wilty after 2 days in the fridge so if you plan to have leftovers, add the spinach in as you go.

Spicy Polynesian Wrap

This was so good and so different from our typical dinners. We also used the Spicy Pineapple Sauce and it really made the dish. We halved this recipe and got 4 8-in wraps out of it but we didn't have enough rice and had some chicken left over. Next time, I'll increase the rice by at least a 1/2 c.

Mushroom Pie

Amazing! We used pre-made pie crusts and mozzarella cheese it turned out wonderfully. It has a kind of carbonara flavor that is just excellent.

Soft Sugar Cookies V

These were just perfect. Easy to roll out, easy to cut, baked up soft yet retained the butout shape. These have just the right sweetness for adding a little frosting on top. Great recipe.

Saltine Toffee Cookies

My boyfriend's mom has made these as a Christmas cookie staple for years and everyone loves them. They are easy and cheap so everyone wins! This time around, I used a whole cookie sheet full of crackers (about 1 1/3 sleeves) and the toffee covered but it's not as thick as I'd like. I think next time I'll up the butter and sugar each by 1/4 cup. I also didn't need to return the pan to the oven for the chips to melt.

Chocolate Mint Cookies I

These have a great flavor but they come out a little crispier than I would have liked, even after only 8 minutes of baking. I"ll make these again but I wish they were softer.

Snow Flakes

These cookies are lovely and flavorful. I used mint extract and green food coloring with the "tree" cutout for the cookie press. This recipes works even better with the Pampered Chef cookie press than the recipe PC includes. I don't notice any aftertaste, as some have said but maybe it's masked by the mint. Either way, this is a keeper.
