Buttermilk Corn Bread

This recipe makes my mouth water! My family & I love it! I make it often in muffin cups, and have also made it in a 9 in. round with success. I leave out the white sugar and I use organic blue cornmeal. I love that it uses oil. I find that easier than butter. It is moist and crumbly. This is exactly the quick and delicious cornbread recipe I have been looking for.

Plain Cake Doughnuts

I think I made these the laziest way possible. I made a half a batch. I went ahead and used a whole egg, but scaled back the other ingredients. Then I simply spooned small amounts of the batter into the hot oil. Super easy and exactly the kind of indulgent snack I was looking for. Also, I used buttermilk. I will be making these again when the evil cravings haunt me.

Okra Rice

All three of my boys like okra, so I knew this recipe had a good chance of success. I served this as the main dish, with (pinto) beans for a side. Sure enough, it went over very well, even though I used only about a fourth of the bacon. One reviewer said his didn't turn out slimy, but mine did. I may try Aggeliki's tips next time for less slimy texture.

Kathy's Delicious Whole Slow Cooker Chicken

This is easier than standing in line and buying a rotisserie chicken! Just as yummy, too. I love that it takes only 3-4 hours on high and I can start it in the afternoon rather than in the busy morning. My family of 5 ate this entire 4+ lb chicken tonight. Everybody liked it. As other reviewers said, it may not take as long as the recipe stated. My larger bird was falling off the bone after only about three hours on high. I cooked mine in a large rectangular crockpot. The breast was definitely tender enough, but next time I think I will cook it with the breast side down. I did not add any extra liquid to mine, and I did use less oil (2 tsp sesame, 2 tsp olive oil). I also left out the worchester sauce since I am trying to serve more "real" foods. I used organic soy sauce.

Mahi Mahi Rockefeller

It's pretty hard to go wrong with that much bacon and cheese. This was a really good recipe, and my whole family of five liked it. I used fresh spinach like some other reviewers. I melted the butter and started the spinach first in the skillet. When it had wilted a bit I added the onions, garlic, etc. Also I didn't have evaporated milk so I used regular milk. It was not a problem. I used both mahi mahi and tilapia. The mahi mahi tasted the best in this dish.

Homemade Black Bean Veggie Burgers

We really really wanted to like these. Really. I liked them the most of the five of us, but they were nothing to write home about. I tried making them without the cumin to see if that was what my family didn't like, but they still didn't go over very well.

Slow Cooker Escalloped Chicken

I made this when my Mother-in-law was staying with us, and it was a big hit with the whole crew. The suggested 1 1/2 cups of liquid worked great for me. I was very scared to try this recipe, but I am so glad I did.

Ricotta Cake

I have always thought cake & ricotta should get married, so I was all over this recipe when I saw it. SO good! Definitely better the next day. I halved the recipe for the ricotta mixture, used a white cake mix (using 2 whole eggs & one egg white), and added at least a teaspoon of almond flavoring instead of the vanilla. Delicious with fresh strawberries! I will do the same next time, or try it with chocolate cake mix & use vanilla.

Chicken Oreganato

This was good! Next time I will make sure I put plenty of salt and about 1/4 cup of lemon juice. Maybe garlic powder too as others suggested. But it went over well with my whole family. I put plenty of oregano on them this tim; it's a great flavor with the lemon.

Golden Chicken Nuggets

These are great. I didn't make them exactly like the recipe stated since I was out of Italitan seasoning. I just used dried basil and oregano. I also only dipped one side of the chicken pieces in butter, and put the buttery side facing up. I sprayed my pan with canola spray. It worked well. They were a big hit.

Chocolate Banana Cream Pie

I was drawn to this recipe because it had real chocolate and real cream in it, not chocolate pudding. I actually didn't like it all that much, but I still gave it 4 stars because it is a good recipe. I think I just don't care for banana cream pie. :) My friend & husband liked it a lot. I used a graham crust and that worked well.

Turkey Sausage Breakfast

This was great! For some reason, I had never thought of using potatoes in a breakfast casserole. I substituted the frozen hashbrowns with 1 large potato, grated. I put in an extra egg and baked for less time (as others warned). I also added about 1/3 cup of fat free cottage cheese. I mixed up all the ingredients in a large bowl, refrigerated it, and then in the morning just dumped it in the pan and baked it. This went over well at my moms group.

Pumpkin Black Bean Soup

Yes, this is an ugly but a goodie. My family enjoyed this! I cooked dried black beans according to directions and used those instead of canned beans. I used about half a can of diced tomatoes with green chilies and a small can of tomato sauce. I also added 1/4 teaspoon cumin and used chicken broth instead of beef. I omitted the ham (although I used a bit of bacon when simmering my beans). I didn't puree any of it in the hopes that it would showcase the orange of the pumpkin (and to simplify). It worked at first but by the time it had simmered, the orange color had turned into an ugly brownish color.

Fudge Puddles

I just made these for the 2nd time, and we are really enjoying them! This time when I took them out of the oven I just crowned them with some chocolate chunks. Much easier, and almost as good, but the fudge is worth it when you are not in a hurry (or feeling lazy!). The only thing I don't like about the prep is that the dough is super sticky and is hard to roll into balls. And the first time I made them I made the balls too big and that created a "muffin top," which is not what you're going for in this recipe. We are big fans of peanut butter, so I think I will be keeping this recipe handy.

Banana Peanut Butter Bread

YUMMY! I followed the suggestions posted by Tina M., and also reduced the sugar to 3/4 cup. Using an 8X8 pan is a great idea, though mine still didn't bake too evenly since I used my toaster oven. I also omitted the walnuts since I didn't have any & used crunchy peanut butter. I will definitely be making this again.

Good 100% Whole Wheat Bread

This recipe baffles me. There is nothing in it to help the bread to turn out light, nothing in it to avoid the dense loaves that are common with homemade 100% whole wheat bread. Most people used gluten, but even though I did, mine just doesn't rise high enough or turn out light enough. I have tried increasing the yeast amount and other things (I also proofed my yeast.) I use fresh ground white whole wheat. I really liked it the first time, and have made it several times, but I just wish it would rise HIGHER and have more appeal once the "fresh out of the oven" appeal is gone. My boys eat this all right, but even though they only eat whole wheat bread, this is not their favorite.
