Banana Pie

Sounds crazy but I used melted lite promise instead of butter, splenda instead of sugar, fat-free cream cheese, fat-free milk, fat-free cool whip and this still tasted fantastic!

Great Stew! I also added a clove of garlic, red wine, and at least twice the cornstarch. Perfect cozy comfort food!

Chicken Enchiladas II

Just wonderful. Great for people who think that they don't like Mexican. I poached fresh chicken in stock, herbs and veggies and then shredded it. Loved it!

Cheesy Shrimp Meltaways

I'm editing my review because I served this at Thanksgiving today and the new adjustments I made were a huge hit for my relatives who have had this before. Big improvement for a little work, get a handful of medium frozen shrimp, boil them in lightly salted water, chop them and use them instead of those babies out of the can. I used 5oz of pub cheese because I didn't have the Old English and it was just as good. Lastly, bake them on the halved english muffins and cut them into wedges after they've rested for a couple of minutes. This allows all of that cheese and butter to settle into the nooks and cranies before you cut into them let it all melt out onto the tray all run out. YUM!

Tangy Rosemary Chicken

I just made this and it was so surprisingly delicious. My whole family loved it including my 10 month old daughter and 3 year old son. it's a nice way to enjoy succulent chicken with hardly any effort.

Easter Breakfast Casserole

This was just perfect for a family reunion brunch. I did make a few adjustments having read others suggestions. I used lean Jenny O Turkey ham cut into chuncks and 1/2 lb. of bacon. To prep the night before, I popped the bacon in the oven on a cookie sheet for 20 min and sauteed and (heavily) seasoned the onions and potatoes. In the morning, I spread the potato/onion mixture on the bottom of the pan, then the layer of ham and bacon (which I put in the oven on a tray while it was pre-heating to crisp it up again, then the egg/milk/cheese mixture. Because I used more meat, I felt it needed more egg, so I ended up wisking 4 more eggs with maybe a half cup of milk and pouring it over the top. Everyone loved it and no one noticed that it was turkey ham, lite shredded cheddar and fat free milk!!!!!!!!!!
