I love to cook comfort foods. Some of my specialties, I bring to work and share with the group. My man also appreciates my good cooking.
My favorite family cooking traditions
I used to love to watch my grandma in the kitchen. One of my favorite traditions is Thanksgiving, when my mom makes her homemade oyster dressing.
My cooking triumphs
I have won a couple of bake offs here and there at different work related functions. I am just proud that cooking and baking come so naturally to me. I can follow just about any recipe and even add my own special touches to it.
My cooking tragedies
I have definitely burned my share of baked goods! Practice makes perfect!

Baked Spaghetti II
We were less than satisfied with this version of baked spaghetti. It really didn't have enough flavor even though I added oregano. I'm going back to the drawing board on this one.

Charleston Breakfast Casserole
I made this casserole for a work breakfast meeting, and everyone loved it! The casserole dish was practically licked clean. The only modifications I made were to use chopped green chilis instead of bell pepper as well as add one small diced onion. Before adding the onions to the egg mixture, I sauted them in the bacon grease for about 5 minutes. I'm not a huge fan of eggs and this was the perfect solution. The croutons practically dissolve and make the egg mixture nice and fluffy. I will definitely make this one again. Thanks!

Viva Madrid Spanish Chicken
This dish smelled great while cooking, but the taste disappointed me. The flour coating made the outside too soggy. I don't know what I would do to improve it. Sorry
