Butterscotch Pumpkin Pudding Cake

This was a great recipe to play with! Loved the butterscotch idea! I switched the cake to a spice cake mix and didn't use the pumpkin pie spice. Used a whole small can of pumpkin. I did add a tad but of vanilla because we are big on vanilla in my house. I was very worried about baking at a low temp and I couldn't get a clean toothpick to come out. I raised the temp to 300 and cooked it 10 minutes longer just to be safe. After letting it cool it came out of the pan beautifully and the color was just gorgeous. I think because the cake is just so moist I would never get a clean toothpick. Great cake that tasted amazing!

Chipotle-Lime Chicken Skewers

I followed the recipe but it turned out really yucky. Tasted way too mayonnaisey and didn't have enough of the other flavors. I even used a little extra cilantro because I had chopped too much. It was a waste because you couldn't even taste the cilantro. Very disappointing, will not ever be making again.

Potato Casserole II

Not sure where I went wrong? It was not a hit in my house. My kids said it had too much onion flavor and I thought the chips on top were gross. I did use fresh potatoes because I had a ton of them in the pantry. Maybe you have to use frozen for it to taste right? Oh well...too bad.

Applesauce Bars

We didnt really like this recipe. My boys took on nibble and said "No Thank You". My husband said it looked gross and wouldnt touch it. I thought it was okay. Kind of boring and not very tasty. Will not be making it again.

Rosemary Ranch Chicken Kabobs

Fantastic recipe! My entire family LOVED it! We have made it many times and here are a few of our misadventures. Don't over marinade! 30 minutes is all you need the texture of the chicken will change if you go too long (from the acidity of the lemon I think). Fresh rosemary is the only way to go...it tastes completely different with dried rosemary. We forgot fresh one time and were very disappointed with the dried version. For some reason the way to get the best taste is on the BBQ, we tried other ways of making it and it was not as good. Don't mess with the original recipe, it is really awesome the way it is!

Baked Garlic Parmesan Chicken

Great dish! I was very impressed! We were looking for chicken to eat with chicken Parmesan and this sounded easy and good. It did not disappoint! The only substitution I made was because I had run out of bread crumbs and used crushed ritz crackers instead. Also I used whole chicken breasts and they were pretty big so I added 10 minuted to the cook time. I checked the internal temp at 30 minutes and they werent quite there but were perfect after 10 additional minutes. Will be making this again, very easy and my family loved it!

Quick and Super Easy Chicken and Dumplings

This was a great recipe! The only thing I changed was sauteing onions celery and carrots in the pan before I started the recipe. I also added a little extra broth since I had added those extra ingredients. This was delicious and so easy! My husband said it was the best chicken and dumplings he ever ate. It is also very pretty in the pan as it cooks. My husband kept sneaking peeks at it and telling me how much he couldn't wait to try it. Great recipe!

Pat's Potato Salad

I don't normally like potato salad since I'm not at all into eggs. This was delicious! I have never made something for a picnic that had everyone asking for the recipe. This was a huge hit! I made it just as written and it turned out fantastic! I suggest making it the night before since it does taste tons better when the flavors have had time to mesh and get cold. It has a unique vinegar taste that is very oniony but AWESOME! I had very little left but my step-dad and husband were arguing who got to take the left overs home!
