Coconut and Chocolate Rice Crispies

I found this recipe while looking for a recipe for chocolate rice crispy treats. I didn't intend to use the coconut but at the last minute figured what the heck and since I had some flaked coconut on hand went ahead and added it. Everyone raved about this dessert, especially the coconut. It's subtle but just enough. I found this recipe 4 days ago and have already made it for 3 times for 2 different occasions. It's wonderful!!

Pesto Polenta Lasagna

Most excellent recipe! I baked the polenta before assembling the lasagna, and I took the suggestion to layer with polenta, pesto, fresh spinach, fresh tomatoes, ricotta, sauce, next layer of polenta, mozzarella, then pinenuts and fresh parmesean! I've already made it twice in 2 weeks. The first time I made my own pesto and sauteed the spinach. The second time I used pesto from a jar and just added the fresh spinach "raw" (to save on time). They both turned out great. This one is a keeper!

Key Lime Pie VII

You can not beat this recipe!! Family and friends who consider themselves key lime pie connoisseurs rave about this pie. Apart from squeezing the limes, this is an incredibly easy pie recipe that is beyond delicious. Make this pie and you will be a hero!

Black Bean and Salsa Soup

Excellent! I can only echo what those before me have said - this recipe is so easy, so healthy and so delicious! I was fortunate enough to have some homemade salsa left over from the weekend. The salsa was strong on lime and cilantro and blended nicely with the other ingredients, so next time I will likely add some lime juice and cilantro. Other than that I wouldn't change a thing. You can't go wrong with this recipe.

One Pot Tuna Casserole

I love, love, love this recipe! It's so easy and so good. I've made it a couple of times now and each time I like it more. It's great fresh off the stove and it's great reheated the next day. The first time I made it, at the end I put it in a casserole dish and stuck it in the oven for a few minutes and let the cheese melt on top because that's more what I'm used to. But the second time, I didn't want to take the time to bake it and just followed the instructions. It was wonderful right out of the pot and I'll probably never take the time to bake it again. It's a great recipe.

Roasted Vegetable Lasagna

This is a great recipe. I've served it twice, both times to rave reviews. I took others' suggestions and increased the amount of vegetables as well as added spinach to the cheese mixture. I also used regular lasagna noodles (rather than no-boil) because I still prefer them when I have the time. I'm totally sold on using roasted vegetables for lasagna and will probably use this recipe exclusively from now on. It's exactly what I've been looking for in a vegetable lasagna.

Absolutely delicious! I followed some of the other suggestions (less olive oil, balsamic vinegar) and it turned out wonderfully. This is definitely a keeper!

Corn Dog Casserole

This is just a fun, tasty recipe. We loved it. The combination of sage and celery makes it very flavorful. I halved the recipe because I wasn't so sure about it, but it was wonderful and will definitely make it again on a regular basis. It's a fun change of pace and easy to prepare.

French Toast I

This is a great basic recipe - it's just right and very easy. It is now my standard french toast recipe. I made it as written except that I used a loaf of homemade Italian bread. Delicious!

Egg Salad Sandwiches

Great recipe!! I took others' suggestion and used real onion as well as adding some chopped celery just because it wouldn't be egg salad for me w/o celery. Delicious and exactly what I was looking for!

Breakfast Pizza I

This ended up being a fantastic recipe - once I gave up on the idea of trying to make it on a pizza pan! I laid out the crescent roll pieces on a pizza pan and could tell pretty quickly it wasn't going to be easy to make a circle that covered the pan. So I took the suggestion of using a 9x13 and coaxed the pieces into fitting with a little help from my rolling pin. I also took the suggestion of baking the crescent roll crust for a few minutes (6min?) before adding the toppings - VERY helpful! Other changes I made included using Morningstar Griller crumbles instead of sausage to make it vegetarian and using a Mexican 3 cheese blend to add a little kick. I didn't brown the crumbles because they seem to cook just fine even when added frozen, but I did the brown the hash browns, just for good measure. I still baked it for 25 min even though I had pre-baked the crust a little, and let it sit for a few minutes before serving. It was EXCELLENT!!

Healing Cabbage Soup

This is an excellent recipe! It is so flavorful, so easy and so healthy! I took several suggestions from previous reviewers that I will definitely include next time I fix this (which will be soon!). I added 1 tsp of majoram and some chopped baby carrots and celery (had them on hand, didn't want them to go bad). I substituted vegetable broth for chicken bouillon (vegetarian) and seasoned diced tomatoes (basil, garlic, oregano) for the stewed tomatoes. I didn't drain the tomatoes (to retain the seasonings) and the recipe still worked out great. My girlfriend (who usually requires massive amounts of cheese and/or butter to eat vegetables) suggested that I make it every Sunday! I highly recommend this recipe!

Baked Tofu Bites

This is a GREAT recipe. I omitted the liquid smoke (before reading other reviews) because I didn't have any on hand. After reading other reviews, it sounds like this was probably a good thing. I wouldn't change a thing (other than omit liquid smoke) about this recipe. These bites are so tasty, both hot and cold, that I could see using them in various ways at least a couple of times a week (I like tofu!).

Cabbage Roll Casserole

I loved this recipe and it was big hit at dinner with others as well. I took the suggestion to brown the meat with the onion and some garlic. I also added a bit of chunky vegetable spaghetti sauce to the tomato sauce. I reduced the recipe by half (small family) and it still almost overflowed the 13x9 pan! This recipe is a keeper and will definitely go into my regular rotation of favorites.
