Pasta Fagioli

I followed other reviewers advice/changes and this is absolutely the best. I also like that it doesn't make too much. Omitted parsley, added spinach to veggies, used can of italian tomatoes instead of fresh and sauce, added precooked small meatballs (ground beef w/seasoning only) and precooked veggie curl pasta. I also used a tablespoon of jarred pesto in lieu of the italian seasoning. I made it last night and had for lunch today.

Fudgy Cream Cheese Tunnel Cake

I added the egg to the tunnel and saved 1/3 of the cake batter to gently spread over it before baking. The topping was sweet but ok. I made this for an office b-day and am being hounded to make it again already! I would love to try a pineapple cake mix with pineapple/coconut filling, white chocolate/coconut ganache...yum

Creamy Au Gratin Potatoes

I will definitely use this again. I used my apple peeler/corer to slice the potatoes, microwaved covered for 15 min then baked for 15 min. I caramelized the onions and didn't care for that so will probably omit them next time or use onion powder. I used 1 cup each mild yellow and aged white cheddar cheese. The only reason it didn't get 5 stars is because it didn't reheat the next day as well as I would have liked. I also like that there is no soup in it.

Robert Redford Cake

This is awesome! I put some pink and green sugar and Springy things on top and used all the walnuts (plus!) in the bottom. The cream cheese layer could easily be doubled. I can't wait to try it with other flavors but really liked the pistachio! I'm going to do chocolate next with chocolate cream cheese! Lemon after that...

Filet Mignon with Bell Pepper Haystack and Fresh Guacamole Served with Corn Chips

I fixed this for dinner last night and it was absolutely delicious. I halved the recipe and the only subs I used were sliced baby bella schrooms and I used olive oil spray for the oils. I followed it exactly right down to cooking the filets 5 min on each side then resting for 10 min at which time I finished the sauce. My husband likes his meat more well done so I sliced him two medallion sized pieces off the tenderloin roast and my rare-medium piece was thicker. For the guacamole I mashed two avocados and used lemon juice but I didn't have a fresh jalapeno so I took a jar of salsa and rinsed it off leaving the diced chilis, tomato, and onion chunks. I used about a tablespoon of that! LOL Creative Cooking at it's finest. I served it on the plate with tri colored tortilla strip salad toppers on top. It was a refreshing taste to go with the richness of the meat dish. For my starch I used a russet potato, peeled, cored, and spiral sliced on my apple peeler, then cooked it in butter, ground pepper and sea salt in a frying pan. I can attest that it did take about two hours to fix. I pre-slice/cut/measure all my ingredients before I start cooking and that made the cooking time smoother. It wasn't the greatest choice for a week day meal but it sure was good! I wish I had taken a picture of the plate and will be sure to next time! Bon Appetite!

Peppered Shrimp Alfredo

DELICIOUS! I used 1 lb portobellos, 1/2 onion, added some chicken, and used fresh linguini. My non-pasta husband loved it. I've made it twice since then. The second time I used frozen cut up peppers and onion and it was an easy weekday meal. No parsley either time.

Southwestern Chicken Salad

Needs more salt and spices. This has the base for a truly delicious salad but I agree with the others it needs to be kicked up a couple of notches. It was good on chips and would be good on tostada shells but it just missed the mark. Note: 2nd go-round added about 1 to 1-1/2 tsp Tabasco sauce, more salt and pepper and it was much better.
