Baked Vegetables I
This was a lot better than I thought it was going to be. The onion soup mix gave the vegetables a great flavor. I used prepeeled baby carrots instead of slicing my own, and I added 1/2 of a small package of frozen broccoli instead of buying them fresh. The carrots took the longest to cook. 15-20 minutes into the vegetables cooking I stirred them and added more olive oil to make sure that all of the vegetables got moist. Thanks to this website I have another great recipe to add to my collection!

Black Beans and Rice
This dish was excellent! I made some minor adjustments because I used boil in-the-bag brown rice. I made the rice separate from the beans, so the veg. broth was not needed. I seasoned the beans with a lot of different spices and some cayenne pepper for an extra kick. I served the beans over the rice, added some chunky salsa (medium) and topped it off with a sprinkle of shredded parmesan cheese. It was delicious! It was like a vegan low carb burrito!

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato
This was a lot better than I expected it to be. I love sweet foods, this one was just right. The sweet taste was not too over powering because of the spicy taste that it also gave. I will be making this dish a lot!
