American-Italian Pasta Salad

Exactly what I was looking for... this is perfect for cleaning out my fridge. I subbed greek yogurt for s. cream, used a "mystery packet" from Tastefully Simple instead of It. Seasoning (I think it was 5 years old... and I think it was some sort of Asian blend), and ham instead of salami. Anyways, it was good! Thanks for sharing!

"Pantry Raid" Chicken Enchilada Casserole

Chicken Stew With Coconut Milk

Yum. Super easy and super good. I haven't made in the microwave (as cooking chicken in the microwave freaks me out), but have prepared on the stove & in the crock pot. Used sweet potatoes and frozen peas as sub. for yellow potatoes and lima beans. Omitted tomatoes, and added peanut butter & fish sauce for a bit more flavor. A great way to use leftover chicken. Thanks for sharing!

Super easy and a good base... I used less mayo and more spices... Omitted olives (not a fan) but added fresh chives, cukes, salami and mozzarella. Thanks for sharing!

Jeremy's Philly Steak and Cheese Sandwich

hey - It can be called Philly because the recipe calls for Philadelphia Cream Cheese, right? Anyways, I thought this was really tasty. Instead of mushrooms I used green peppers. And I "eyeballed" the measurements. Really easy too. Thanks for sharing!

Pumpkin Chocolate Chip Cookies III

Yum... these are really tasty & easy. Like other reviewers said, more like cake than a cookie. I did smash them down flat on the baking sheet - baked for about 15 mins total. Very moist. Used apple sauce instead of oil; and dark chocolate chips. Thanks for sharing!

Saucy Chicken Cordon Bleu

I really like this - fancy/easy with simple ingredients. I thought it would be too much with the cream of mushroom soup - I removed this from the sauce ingredients completely - and other modifications included using fresh garlic instead of garlic powder and red wine (all I had on hand) instead of white. I browned the chicken on all sides before putting in the oven, and increased the cooking time to 30 minutes. Turned out really good! Thanks for sharing.

Gourmet Mushroom Risotto

Wow! This was great! Followed the recipe to (almost) a T - including the 2# of shrooms. I used 2 tbsp of butter (instead of 4), and next time I'll add more shallots. When I hit the 20-minute mark of adding the broth I stopped... probably used only about 5 1/2 cups. So good. Thanks for sharing.

Sukhothai Pad Thai

hmm, this was kind of strange to me. i took some suggestions and used fish sauce instead of soy, rice vinegar instead of regular, lime juice instead of tamarind, cayenne instead of paprika, peanut butter instead of peanuts and cut back on the sugar. also all i had on hand was vermacielli (sp) rice noodles. maybe i should have stayed with the original. either way i did not really care for this - it tasted too salty and not like pad thai from a restaurant. i may try it again by tweaking the ingredients further. i do like a coconut-style sauce so maybe i will try adding that?

This pasta salad is fantastic and different. I added some chopped yellow pepper for some crunch and color. Other than that... I cut back on the oil & sugar, and used sugar substitute to cut calories. THanks for sharing!

Italian Spaghetti Sauce with Meatballs

This was really good & really easy! Who knew so few ingredients would make such a tasty sauce. I was nervous about putting raw meat into the sauce... but it turned out great. I thought the meatballs were very flavorful and not at all dry. I may try this next time in a slow cooker. Thank you for sharing!
