Best City Chicken

My Grandmother and Mother always made these. They use to marinate the cube pork with a little olive oil and garlic overnight. This really flavors them. Then what I do the next day is, I dip them in egg white or egg beaters, then flavored bread crumbs, then brown in oil then put on rack in baking dish. I don't eat eggs and these come out just fine.

Pork Chops Deluxe

Just want to add another note about this recipe. I made it last night with boneless chicken, and it tasted real good. I added the tomatoes at the beginning, and also put it over brown rice pilaf. Using either chicken or Pork chops in the recipe were really great !!

Easy Oatmeal Muffins

These are so good !! We love them!! I did add about 1 teas of cinnamon to the mixture, and used brown sugar instead of white sugar. Instead of 1 whole cup of white flour, I added 1/2 cup of white flour and 1/2 cup of wheat flour. This recipe is great tasting, and it truly is the best recipe that I found for oatmeal muffins. Thanks so much for it !!

Salsa Chicken Burrito Filling

This was very good..a bit salty, but good. What I did was when I filled the tortillas with the chicken, I sprinkled a little cheddar cheese on each one, then rolled up the tortillas and put in a baking dish, and topped with the rest of the salsa and sprinkled a bit more cheese on top. I then covered with plastic wrap and put in the microwave for a few minutes till heated through. When done I topped with shredded lettuce and sour cream. Delicious !! Thanks for the recipe !!

Aunt Lillian's Crumb Cake

This is the best crumb cake we have ever tasted. Very moist. (usually crumb cake is on the dry side, but not this one). Great taste, delicious!! Easy to make !! The sour cream was real good in it. This will be the only crumb cake I will ever make. Thanks Aunt Lillian for this great cake !!

Squash Stuffed Chicken Breasts

One word for this recipe.."Delicious". The only change I made was like another viewer said. I pounded the chicken, but I did not roll it with the stuffing. What I did was after I pounded it I spread the stuffing on it then topped it with another pounded piece of chicken, dredged it carefully in the flour and kinda squished it together, so it would hold together. When I browned it, I was just careful fliping it. The stuffing did not fall out. This worked out fine. Had stuffing on every bite. I did put a little olive oil in the bottom of the baking dish. This did not stick or anything. It was perfect !! Some cooked carrots, and baked potato made this a healthy meal. This was a very tasty chicken dish. Can't wait for leftovers tonight. Thanks for it, it definitely will be a regular on our table.

Carol's Arroz Con Pollo

YUMMY...this was so delicious !! I did not have saffron...but I used the small package of " saffron yellow rice with seasonings" and at the end I added about 1/2cup of cooked white rice,(just to make sure there was enough rice for this dish) and this was so delicious. I did pre-cook my chicken first on top of the stove with a little water in the frying pan. This definitely is a keeper in our house. The left overs tasted just as good..Thanks for this recipe !!

Cheapskate Stew

DEICIOUS is all I can say about this recipe. We thought is was very tasty!! I added garlic when frying my hamburg. The veg's I used were 1 cup of can whole tomatoes cut up (plus some liquid), 3/4 cup of frozen corn, 3/4 cup of fresh green beans cut up small( precooked them for a while), plus the 3 carrots stated in the recipe, and shell pasta. I followed the rest of the recipe, and this turned out delicious. I love the Italian seasoning flavor. We did sprinkle a little parmesan cheese on it when serving. It was thick...but so what! The flavor was there and that was important. Very healthy and filling. Good meal for these chilly nights. Served with buttered dinner rolls...EXCELLENT !! Thanks so much for the recipe...it definitely is a keeper in my house..

Italian Green Bean Chicken

This was excellent !! When chicken and garlic was cooking in olive oil, I sprinkled oregano, parsley,and basil all over the chicken and garlic. I then added the fresh green beans. All I had was a big can of whole tomatoes which I then cut up into small pieces and added them and all the juice. I cooked 1 cup of mini penne and then added that. I also sprinkled parmesan cheese all over the mixture, then cooked it for a few minutes till it was good and hot. A couple of dinner rolls and you have a delicious meal. Very easy to make and very tasty. My family loved it. This definitely will be a keeper. Can't wait to make it again.

Roasted Chicken with Risotto and Caramelized Onions

This was excellent!! The caramelized onions really gave this recipe a great taste, plus garnishing with thyme was a plus. I didn't have any arborio rice or brown rice, so I tried white rice and that worked fine. Would definitely make this again and again...

Ham and Swiss Casserole

Yummie is all I can say about this recipe!! I did add a little more warm milk during baking..thought it was a bit dry. Also I only had cheddar cheese on hand...can't wait to try swiss cheese. My husband loved it ...which says a lot..picky if you know what I mean..Definitely a keeper in our home !!

Best Yet Turkey Chili

Another great recipe to use turkey! I browned the turkey and added the green pepper and onion and then 1 cup of frozen corn (I didn't have can corn) and stewed tomatoes. I didn't have any black beans so I used red kidney beans and it was delicious. I also added 1 tsp of chili powder, and some black pepper. We thought it was great chili..thick and delicious.!!

Outstanding Chicken Dinner

Yummie is all I can say about this recipe. It was so good!! Instead of the artichoke hearts I made fresh green beans and potatoes and I used the cheese sauce over them also. Boy was it a hit with my husband. I also used skim milk which was probably just as good as half and half. Excellent meal and quick !!
