The Best Rolled Sugar Cookies

Seriously, don't roll out the dough too thin. I've made this a few times. The time I did it most recently they turned out the best because I made a thicker cookie. 1/2 in roll out instead of 1/4 inch.

Rice Pilaf with Raisins and Veggies

I made this with a blend of white, brown, and wild rice that I had. I also used half golden raisins and half dried cranberries. I substituted in shallots for scallions because that is what I had on hand. I will definitely make this again.

Oatmeal Cranberry White Chocolate Chunk Cookies

I made the following changes: 1 cup whole wheat and 1/2 cup all purpose flour, 2 tsp vanilla, 1/2 tsp cinnamon, semi-sweet chocolate chips, and dried cranberries with orange essence. I also made the cookies much smaller. My batter yielded 45 cookies. I reduced the cooking time to 8 minutes, and then let the cookies sit for 3 minutes before moving them to the cooling rack. The result was a yummy, chewy oatmeal cookie. I made some without the cranberries for my husband; they were good, but definitely not as good. Next time I might use all whole wheat flour. My rating of 5 stars is based on the alterations I made.

Slow Cooker Tapioca Pudding

Mine turned out thicker than I like it. I ate it cooled. I might have preferred it warm. I would try this recipe again, but switch the heat from high to low sooner than I did (there was no medium setting on my cooker).

Squash Braid

Everyone loves this. It is a VERY sticky dough. I end up added a lot of extra flour when I am working with the dough just so that it is manageable. To cut down on the stickiness I also let the squash cool before making the bread. It was still quite sticky. I've made this 3 times now with rave reviews.

Pineapple Chicken Tenders

I added ginger and garlic as others suggested and splashed the chicken with pineapple juice when they were done. I cooked them indoors on a grill pan.

Oatmeal Chocolate Chip Muffins

The first time I made these, they came out great. The second time, they were very dry. I think the first time, I adapted the recipe and the second time, I followed the recipe exactly. Today I made these again and this is what I did: -Added 1 1/2 tsp vanilla -Added 1/2 tsp cinnamon -Left out the nuts, so I added more chips. Also, I used a combination of mini and regular chips. They were delicious!! It made 18 muffins, which probably means my muffin tins were smaller. I cut the time down a bit to account for this. The full time would have dried them out, I think.

Easy Pesto

This pesto was delicious. Some suggestions for cooks: -My first batch of almonds burned. For the second batch of almonds, I put them on the lower shelf and cooked for only 5 minutes. -I don't have a food processor (only blender), so I banged the almonds with a meat hammer and then added them to the blender. This worked well.

Curried Squash, Garbanzo Bean, and Potato Stew

Spicy and Delicious. As in other reviews, I found that the potatoes did not need to cook quite so long. Also, I added a bunch of garlic. It is delicious, but the plain yogurt makes it fantastic.

Black Bean and Salsa Soup

I've made this twice. The first time I followed the recipe exactly. The second time, instead of putting everything into a food processor, I just mashed up the beans with a spoon (I guess I like my soup chunkier) and then added the rest of the ingredients to the pot. I also added 1/2 cup more vegetable broth and about 1/2 cup of frozen corn. I liked the soup better the second time, though both versions were delicious!

Chocolate Chip Crater Cake

I felt like this needed more chocolate. Instead of putting 1 cup of chocolate, I may put 1.5 or 2 cups next time. And I would put the choclate in two layers instead of one. The family really enjoyed this recipe though. Thanks.

Cake Mix Cookies VIII

These were delicious and easy. And they really do stay soft for days. I've made this twice so far. Both times with chocolate cake but once with peanut butter chips and once with semi-sweet chips. I preferred the peanut butter.
