Potato, Broccoli and Cheese Soup

I really liked this, but my husband didn't. I think the cheese I used may have been extra sharp cheddar...mild might be more to his liking. I have returned and dropped my rating, because it still didn't hit the mark for us. Looking for a new broccoli recipe with more broccoli flavor.

Nanna's Banana Bread

My husband says this is what Banana Bread is supposed to taste like! My minor adjustments were to use 1/2 cup white and 1/2 cup brown sugar and instead of buttermilk I used plain yogurt. Looking forward to trying it with the chocolate chips. Next time I would like to try with butter rather than oil.

Luscious Spinach Artichoke Dip

I used a whole pack of cream cheese, 3/4 cup of mozzarella cheese and most of the spinach. I cut half of the artichokes up and left the other half in chunks. We thought it could have had more artichoke flavor. Maybe not as much cream cheese?

Marinated Baked Pork Chops

My pork had reached 175 degrees after just 30 minutes of cooking with a lid on the pan. So I turned the temp down to 200 while other parts of the dinner finished and then finished the meat up with a quick broil. Loved the flavors!

Flank Steak a la Willyboy

Really enjoyed this recipe, though when I went back to read it now I realized that I used red wine vinegar instead of just red wine- oops! We topped it with the Chimmichuri sauce on top of the steaks and that really cut the sweetness of the marinade - suggested by another review. I've included that recipe again. To make the Chimmichurri Sauce, I put 1/2 c fresh parsley, 3 T olive oil, 2 T red wine vinegar, 3 cloves of crushed garlic and 1/2 t salt in a mini food processor. Pureed it until everything was blended and then poured a thick strip of sauce down the center of the slices of steak on everyone's plate.

Pepperoni Bread

Nice outcome. Used the Ricardo's Pizza Crust recipe and added a little bit of tomato sauce. My husband loves bread and pizza so this was a great combo. When I made it a second time I just used some refrigerated biscuits for the dough and we had little individual rolls. Also ran out of shredded cheese, but used string cheese and that worked pretty well.

Spicy Flank Steak

This was fast, simple and tasty. I put the steak over a bed of lettuce, added some french fries, cheddar cheese and ranch dressing. It was a great dinner salad!

Sour Cream Chicken Enchiladas

We liked it. Halved the recipe which made it seem like too much of the sour cream sauce. Also, I erred on the side of too much cilantro (because I love it), but my exaggeration made the meal a little too cliantro-y. All in all, it was okay.

Spaghetti Carbonara II

We've tried a few different Carbonara's and this one was very simple and nice. It wasn't too heavy feeling, but still flavorful. We did think it could use a bit more bacon.
