Rainbow Pasta Salad I

This is a fantastic base recipe, and is quick and easy to make. Like others, I have also tweaked it so it stands up as a main dish meal. I use broccoli, red onion, bell pepper, kalamata olives, banana peppers, cucumber, zucchini squash... sometimes a bit of cilantro and red pepper flakes. I also sub parm for the moz. The great thing about this dish is you can use the base, and then add pretty much whatever else you want. I also use less dressing than the recipe calls for, and don't find that it affects the overall meal. Thank you so much for sharing the dish - I make it at least once a month and we have easy, fast lunches for the week.

Ham and Pineapple Couscous Salad

What a wonderful recipe for those rushed weekday meals. I was done and had dinner on the table in twenty minutes or so. I used the olive oil and garlic flavored couscous and cut down on the garlic powder. I personally didn't find the red onion to be too much, and used what the recipe called for. The dressing is perfect - adds a touch of flavor, but doesn't overwhelm the other ingredients. I will absolutely be making this again - thank you for sharing this recipe, Julie!

Spaghetti Squash I

Zimbabwean Chicken and Vegetable Soup

I made this a couple nights ago, and have been eating it for lunch and dinner since! It's a wonderful, hearty soup - enough for a full meal. I didn't use the carrot (no good ones at the store) or the okra (not a fan). But, I didn't change anything else. The peanut butter gives the soup fantastic flavor, and I love being able to use some of my turnips in it! Since I like things spicy, next time I may add a fresh, diced jalapeno. But, the recipe needs no alterations as it is. I'll definitely be making it Again. Thanks, Mary, for sharing it!

Slow Cooker Beef Stroganoff I

The recipe as posted is not good. I'm sorry, but it's bland, boring. Some of the reviews do offer great tips to "fix" this recipe. However, most of us don't have time to read 2,200 reviews to determine what has worked best.

Garlic Creamed Chicken

This was fabulous - I'm having leftovers for a late breakfast right now, it's that good. I think next time I'll try it with light cream cheese and sour cream. There is so much flavor that I doubt it'll make much of a difference. Thanks for the recipe! I'll be making this again very soon!

Baked Corn Casserole

Spinach Chicken Parmesan

It's rare to find a low fat, low carb recipe that tastes this good! I'll be making this again soon. I think I'll add some extra peppers since I like things spicy, but I sure have no complaints about this dish as is. Thank you, Kathy, for the great recipe!

Surprise South Beach Mashed 'Potatoes'

I couldn't believe how well this turned out. I had it with the London Broil. Nothing will take the place of mashed potatoes and gravy, but this is a neat alternative I make it with real half and half now since it calls for such a small amount.

Slow Cooker London Broil

Finally a great way to cook London Broil. This recipe is so easy to make, and it turned out wonderfully. When I tried to take it out of the slow cooker, I was shocked at how tender the meat was!! My past attempts at London Broil have yielded meat so tough that it was a chore to eat. This is fabulous even when reheated. The gravy made is fantastic, though I think I'll cut down on the tomato soup next time...just to cut the sugar a little - personal preference! I will be making this again soon - so easy and inexpensive. Thanks for the recipe!!

Oven-Roasted Vegetables

I make this frequently as it is so easy to put together. I always sprinkle a little Tony Chachere's seasoning in place of the salt and pepper. Perfect side dish.
