Yummy Sweet Potato Casserole

Corned Beef and Cabbage

Followed exactly. The Corned beef itself was bland. Carrots tasted good. Needs some seasoning besides the pepper packet that comes with the meat.

Colleen's Slow Cooker Jambalaya

Decent recipe. But lacking flavor and heat for me. I added instant brown rice and uncooked shrimp for the last 30 mins as per some suggestions. The rice was mushy and the shrimp too soft and flavorless. I would definitely serve this over rice, not cooked with. Also, it seems to need some tomato paste and salt. Maybe cooking the meat first with seasoning would help. Will not make again. Sorry!

Catherine's Spicy Chicken Soup

This was an amazing recipe. Great comfort food. I did tweak it a bit. I added a can of tomatoe paste towards the end of the cook time. I felt it was a bit watery and needed some substance. Also I did not add as many beans. I added one small can of red kidney beans abd one small can of cuban black beans, a frozen bag of corn instead of canned. I added hot salsa (mrs. renfros) very good, added quite a bit of heat. Will definitely make this again.

Szechwan Shrimp

This was a decent recipe. It was missing something. Kind of watery and bland. I doubled the recipe and followed it exactly. Next time I will do a 1/2 water 1/2 soy sauce mixture for the base, w/ red pepper powder & chili peppers. Maybe even tomatoe paste instead of ketchup for richness. Also much better with fresh shrimp as opposed to pre cooked.

Basil Chicken over Angel Hair

Overall this was a good recipe. I modified it quite a bit after reading some reviews. Will definitely make this again. I sauted about 6 sun dried tomatoes, sliced thin w/the onion about doubled the garlic, also several dashes of crushed red pepper. Once the onion was translucent I lightly browned the chicken, then added stewed italian tomatoes w/juice and a can of diced tomatoes drained. Splashed some balsamic and red wine... voila, moist and delicious. (Also I cooked the pasta in the sauce briefly so it would absorb)

Lemon Pepper Shrimp with Mustard

This dish had absolutely no flavor. We actually didn't finish the meal, we went out for dinner. I used precooked shimp and that was probably the problem. I will try this one more time with fresh shrimp.

Kalamata Pork Tenderloin with Rosemary

This was delicious. The meat was so tender. The next day I took leftovers to work for lunch, all I had was a plastic fork and i was fine. I will definitely make this one again.

Roast Chicken with Potato, Olives and Greek Seasoning

This dish was phenom! It was so flavorful, I am making it again tonight. I did not use McCormicks greek seasoning, I used Cavender's. It hard to find, but if you see it, snag it, its great on all meats.
