Burrito Pie

I have made this several times now, and have found two main factors that make the difference between this being a 3* and a 5* meal. 1. Use at least 2 or 3 tortillas thick per layer. Otherwise, it gets soggy and mushy. 2. Let the meat simmer with the sauce at least 30 minutes, otherwise it does not meld together. This is a great recipe all in all, though, and I always look forward to making it. It is also a great freezer-to-oven meal. Simply take it out of the freezer and cook it at 350 for 40-50 minutes, or until bubbly. I always divide a full batch into several 11X7 pans, so I can freeze a couple for future meals. VERY IMPORTANT: I FREEZE IN A FOIL PAN...IF YOU FREEZE IN A GLASS PAN, YOU CAN'T PUT IT STRAIGHT INTO THE OVEN, OR ELSE THE GLASS WILL SHATTER. DEFROST IT FIRST.

Sesame Beef

This is definitely our favorite stir-fry recipe. I do modify it a little, though, as follows: 1. I use stir-fry beef instead of round steak. It comes out much more tender. 2. I double the marinade, but put half in a separate container. This will be the sauce for the stir-fry veggies. 3. First, I put on the beef with its marinade, and let it cook until done. Then, I remove the beef, and add stir fry veggies and pineapple with the other batch of marinade sauce. Once those are crisp tender, I add the meat back in to warm it up, as well as the sesame seeds, and serve over rice or noodles. It's one of my favorite things to eat!!!

Fluffy Pancakes

I always use lemon juice instead of vinegar for my soured milk. That being said, I feel like the proportions were a little odd in this recipe. Not sure what it was, but the flavor seemed a little unbalanced and "after-tastey". I usually do 1 TBS vinegar/lemon juice to 1 C milk for sour milk, (this recipe calls for 2 TBS acid to 3/4 C milk) so maybe there was too much acid. I had high hopes for this recipe, but it wasn't our favorite, sorry.

Angela's Awesome Enchiladas

The enchilada filling was outstanding!!! But, make sure you use a good enchilada sauce, otherwise it will overpower the delicate chicken flavors. All in all, a great dish! UPDATE: I made just the filling (without the sour cream/cream of chicken soup/chili powder) for burritos, and they were AMAZING!!! Quick way to get the great flavor of this dish without having to go through all the steps of enchiladas.

Ultimate Twice Baked Potatoes

These are great, and one of those dishes that if you're going to go through the trouble, you might as well make a huge batch and freeze them. They're a perfect "freezer-to-oven" meal, here's how: 1. I typically triple the recipe, bake the potatoes and stuff them, but do not put them in the oven a second time. 2. Put stuffed potatoes in a single row on a baking sheet and put in the freezer for an hour until solid. 3. Now you can freeze them without having them stick together. 4. Cook frozen, 375 for 45-50 minutes. I'm having a baby in two months, and having a lot of these in the freezer ready to cook will make my life so much easier!

Black Bean and Corn Quesadillas

The taste of these quesadillas was excellent, much better than our normal quesadillas. I used frozen Southwestern Corn and added chicken for a heartier meal. My only complaint was that we had to knife and fork it, because it was so messy. Of course I'll be making this again, though. Next time I might use the filling for a Mexican Lasagna, which would be good too.

Spanish Rice I

This recipe not only got an "A" in ease of preparation, but the taste was outstanding as well. I was a little confused as to whether or not you were supposed to cook the instant rice first (you're not) but I will definitely be serving this again!

My Favorite Chicken and Wild Rice Soup

This soup is a very good base for your own tastes. The only problem was that I had to add a few bouillon cubes, since my stock didn't come out very flavorful. I also added spinach, mushrooms, and green beans. My husband said this was restaurant quality soup.

Sicilian Sausage Soup

This was a really good soup! I doubled the amount of sausage, broth, and tomatoes, but left the amount of veggies the same. I also added a little garlic and crushed red pepper. We will definitely make this again!

This is a great recipe! The first time I made this, I gave it 3 stars because the oregano taste was too strong-MY FAULT!!! It turns out that 1 tablespoon of fresh herbs is the same as 1 teaspoon dried herbs!!! I'm so glad I figured it out, since this is so yummy and healthy!

Papa Drexler's Bavarian Pretzels

These were insanely good!!! I portioned the dough into 8 pretzels, and they were still a good size. They were gone a few hours after I made them...my husband ate 4 in less than 10 minutes. I'm so glad I found this recipe!

Chicken Enchilada Soup III

I was a little disappointed in the way this soup turned out. It had a unique flavor, yet it seemed to be missing something. Also, the masa made it a bit gritty. It was okay as a dip for our tortilla chips, but I would probably not make this again as a soup.

Pecan Crusted Chicken Salad

This was a very good salad. However, next time I would either add Craisins or skip the cranberries altogether because they made it a little too sour. Also, I think a vinaigrette type dressing would have been better than the ranch. But, we really liked it, and the chicken came out very good. Also, we added candied walnuts and those really improved the salad as well.

Penne with Spicy Vodka Tomato Cream Sauce

The flavor of this sauce was outstanding. We bought some high quality vodka, and that made quite a difference. Also, we were happy to find the mini "airline" versions of the vodka so we could get good quality without spending a ton. There are a couple things I would change next time I make the sauce, though: 1. I would use more sausage. We couldn't even tell it was in there. And 2. Use tomato sauce instead of the diced tomatoes to make the sauce a little thicker, it was really thin, and for a creamier texture. But, delicious nonetheless, and we look forward to making this recipe again!

White Bean 'n' Ham Soup

This was a good and very easy recipe. I only used one can of beans and kept them whole, then thickened the soup with instant potato flakes. That added some extra flavor, but it was still a little bland. I ended up using 1/2 water and 1/2 chicken broth, and had to add some spices. But, this is a good springboard for a tasty soup.

Peanut Butter Cup Cookies II

We liked these. I think they would have been better as regular cookies, though. The muffin pan gave them a soft brownie-like consistency, and I was hoping for something a little crunchier to offset the softness of the peanut butter cup. Great flavor though!

Mom's Buttermilk Pancakes

We really enjoyed these! We added a little sugar and vanilla, but we do that with all our pancake recipes for our own taste. I didn't even need to use syrup, and my 1-year old had two whole pancakes!

Terrific Turkey Chili

We used shredded turkey leftovers, and my husband really enjoyed it. I only used about 1/2 the salsa specified and it was still plenty spicy. I added a can of black beans as well. I would make this again, but cut down on the salsa and crushed red pepper some more so my daughter could eat it next time.
