Three-Meat Stromboli

This was good. I used homemade bread dough. I think it would have been better with some spice; some crushed red chile pepper would have made this great.

Roast Chicken with Rosemary

This was delicious! I added some crushed garlic cloves under the skin. My 1 year old ate ALL the dark meat off the bird in one sitting! It was great, and a great way to use all the rosemary from the garden.

Spinach and Pine Nuts

I added a bit of salt, and a splash of balsamic vinegar. I think that some freshly grated parmesan would go wonderfully. This is a very good base recipe, and is very versatile.

Chicken Pot Pie IX

My pie crust was a disaster, so I made a biscuit crust to go on this...quite good. (Don't put any biscuit dough on the bottom, as it will make the dish soggy.) The filling was tasty, and flavorful. However, I found the boiled chicken to be a little chewy. I would probably prefer rotisserie chicken. I will make this again, though.

Roasted Red Pepper Cream Sauce

First of all, I cut down prep time by using about 3/4 jar of roasted red peppers. This meal came together very quickly and easily. I served it over spinach ravioli, which I thought was a perfect match. Flavor was great, but the texture was very soupy. I even had to add some cornstarch to thicken it up. I don't think all the butter is necessary, and some crushed red pepper flakes would be a welcome addition. But, on the whole, we really liked this sauce as a nice change of pace from regular red sauces.

Brisket with BBQ Sauce

I made this in the crockpot, but followed the directions otherwise. I think I would double the sauce recipe next time, since we like extra sauce to dip our sandwiches in. The flavor was great, though!

Garlic Shrimp Linguine

I really liked this dish, but I am giving it 4* because I think some modifications make it much better. I doubled the sauce for only 1/2 lb of pasta, and it was barely enough. Also, I added some crushed red pepper as this livens up the dish a bit. But, it was quite tasty, and a great base for your own creation.

Finally, a waffle that is light, fluffy, and flavorful! These were excellent...we added a little vanilla, and maybe a tsp of flour to thicken it up, but otherwise it was perfect. Just like a restaurant!

Fluffy Pancakes

I always use lemon juice instead of vinegar for my soured milk. That being said, I feel like the proportions were a little odd in this recipe. Not sure what it was, but the flavor seemed a little unbalanced and "after-tastey". I usually do 1 TBS vinegar/lemon juice to 1 C milk for sour milk, (this recipe calls for 2 TBS acid to 3/4 C milk) so maybe there was too much acid. I had high hopes for this recipe, but it wasn't our favorite, sorry.

Chicken Soup With Black Beans and Corn

Pretty good...I didn't use the "Fast Chicken Soup Base," rather I used chicken broth. I added some bell peppers and diced green chilis I had on hand, but I'd want to play with the seasonings a bit. Good soup, but no real "wow" factor.

Delicious Ham and Potato Soup

This was an excellent dish. I used 2 cans of chicken broth instead of water/bouillon, and also added some carrots and sprinkled some rosemary for flavor. This was perfect, and everyone enjoyed it. It is more a chowder than a soup, very rich and hearty.

Penne and Vodka Sauce

We liked this recipe. I used bacon instead of pancetta because that's what I had, and also sauteed some garlic and onions in olive oil, thus eliminating the butter altogether. I halved the amount of pasta, but kept the sauce the same. That was perfect. I don't think there would have been enough sauce had I used a whole box of pasta.

Peanut Butter Cup Cookies II

We liked these. I think they would have been better as regular cookies, though. The muffin pan gave them a soft brownie-like consistency, and I was hoping for something a little crunchier to offset the softness of the peanut butter cup. Great flavor though!
