Baked Ziti II

This had the flavor of lasagna without all the work. I added some ground beef, because I had it, and mixed it with the pasta and sauce. I put that on the bottom, then added the ricotta mixed with parmesan, then finished it off with a layer of mozzerella. My husband really enjoyed it.

Burger or Hot Dog Buns

These were very good, though a little time consuming. I would probably make them again. I didn't have instant yeast, so I proofed my yeast in the heated milk mixture with the sugar before adding the flour. I also used half whole wheat flour. I made them a little smaller--got about 16 hamburger buns to the batch--and made slider style burgers.

White Chocolate Macadamia Nut Cookies IV

We really liked these. I only had 3 oz of Macadamia Nuts, but it was still good. The only problem I had was the middle was not quite cooked when the bottoms were almost burnt. I would probably decrease the oven temperature to 350 next time?

Basil Tomato Soup

I would love to give this 4 1/2 stars. It was a wonderful base recipe, and I recommend it. My only issue was how thin it was, despite the heavy cream AND butter.

Terrific Turkey Chili

We used shredded turkey leftovers, and my husband really enjoyed it. I only used about 1/2 the salsa specified and it was still plenty spicy. I added a can of black beans as well. I would make this again, but cut down on the salsa and crushed red pepper some more so my daughter could eat it next time.

Cranberry Sauce

I've never liked cranberry sauce--it is always so bitter coming from a can! I made this tonight for our Thanksgiving dinner tomorrow, and I guess I'm a cranberry sauce fan now! My 2-year old ate 2 bowls of it! I just hope it makes it to dinner! I'm looking forward to using it on leftover turkey sandwiches too! I used 3/4 C white sugar and 1/4 C brown sugar, and put 2 cinnamon sticks in while it was cooking, removing them afterwards.

Peach-a-Berry Pie

This is hard to rate...I have no doubts that the recipe is wonderful when using super ripe, middle-of-season fresh WHITE peaches. Unfortunately, it's coming to the end of the season here, and I could not find white peaches anywhere. Maybe the peaches weren't ripe enough...anyway, despite all the sugar, my pie turned out so very tart it was hard to eat. This is definitely a June-July-or August pie...not a fall/winter treat.

Rosemary Ranch Chicken Kabobs

This was outstanding! The grill gave the chicken a nice crispy exterior, while being flavorful and juicy inside. I used Litehouse dressing because it doesn't have MSG like most ranch dressings do. Even my 2 year old, who despises white meat chicken, ate a whole kebab. And the best part? It took no time to get this together. We will DEFINITELY be making this again!

Crispy Rosemary Chicken and Fries

5 stars for ease of preparation, 3 stars for final result, so I gave this recipe 4 stars. My chicken (I used drumsticks) and potatoes did not get crispy at all. The flavor was really good, but we had to peel off the skin and remove the meat in order to eat it.

Fluffy Whole Wheat Biscuits

These were wonderful fresh out of the oven, but didn't save very well. Became very dry within just an hour or so out of the oven. Probably because of how dense the whole wheat flour is. I will definitely make these again, but will cut the recipe in half to ensure we don't have any leftover.

Spinach and Orzo Salad

I made this into a main dish salad by adding some shredded chicken. I also omitted the onion, just because I didn't have it on hand, and used fresh basil (about 1 TBS) instead of dried. This was fabulous. A great light, summer meal. I served it with warm pita bread and roasted red pepper hummus and tzatziki sauce for dipping.

Chunky Monkey Pancakes

Okay, so my husband took a bite and said "It tastes like banana bread!" Indeed, it does. This recipe is a nice combination of sweet and salty, crunchy and chewy. I used half whole wheat flour and walnuts instead of the pecans. The batter was really thick, so they really filled us up, but we really enjoyed this recipe. Thanks CCL!

This is GENIUS! I did a trial run for my daughter's birthday cupcakes this weekend, and they turned out awesome. And, I love that you can play with the colors to get the effect you want. But, keep in mind this is more a decorating idea than a recipe, per se, so if you're not a fan of the flavor, try a different cake mix. I used the gel coloring, and that gave me a nice vibrant and rich set of colors.

Best Black Beans

This is okay in a pinch when I can't make my beans from dried, but the recipe itself has WAY too much onion in it. I used a quarter of an onion and it was still too much. UPDATE-made this again with dried onion instead of fresh and it was delicious. Will definitely make this again using dried onion.

Taco Seasoning I

I was really happy with this recipe. I doubled the seasoning amount for 2 lbs of ground beef, but kept the crushed red pepper the same. It was still plenty spicy! I also added about 1/2 C of water, then brought to a boil and let simmer for 20 minutes. Really a much fresher tasting alternative to the seasoning packets. I will definitely be making this again!

Creamy Italian Dressing I

I used this with pasta salad, and I must say the dressing got better (and thicker) as it sat. At first it tasted strongly of onions and was quite thin. After a while in the fridge it became thicker and settled in flavor. It was pretty good on our pasta salad, but I would probably use less onion next time. I used red onion, and I would do that again, just use less of it.
