Ultimate Twice Baked Potatoes

These are great, and one of those dishes that if you're going to go through the trouble, you might as well make a huge batch and freeze them. They're a perfect "freezer-to-oven" meal, here's how: 1. I typically triple the recipe, bake the potatoes and stuff them, but do not put them in the oven a second time. 2. Put stuffed potatoes in a single row on a baking sheet and put in the freezer for an hour until solid. 3. Now you can freeze them without having them stick together. 4. Cook frozen, 375 for 45-50 minutes. I'm having a baby in two months, and having a lot of these in the freezer ready to cook will make my life so much easier!

Stuffed Shells I

This was good, but I think I prefer the texture of ricotta chesse. The cottage cheese makes a thin sauce that seems more like a lasagna than stuffed shells. So, I will make this again, but next time substitute the cottage cheese with ricotta. Overall, pretty good, though.

Restaurant Style Chicken Nachos

Since it's been so warm, I decided to make these as a light, summer, dinner. They turned out so good! I added some jalapenos on top for extra spice, but I loved the mixture. After all, I had always made nachos with just chips, cheese, and the microwave before! Very good.

Spanish Rice I

This recipe not only got an "A" in ease of preparation, but the taste was outstanding as well. I was a little confused as to whether or not you were supposed to cook the instant rice first (you're not) but I will definitely be serving this again!

Breaded Chicken Fingers

Despite my aversion of frying, these turned out really well. My husband stopped several times during his meal to tell me how good these were, and even exclaimed "These are the best chicken nuggets I've ever had." Served with a variety of dipping sauces, and am serving the leftovers on a nice big green salad for dinner tonight. Versatile food, delicious meal!

Zesty Slow Cooker Chicken Barbecue

This was pretty good. And, not to mention super easy. The sauce was both sweet and sour, so it made for an interesting taste sensation. Served with Lipton Onion Soup Roasted Potatoes and Green Beans. Very good.

Brown Sugar Meatloaf

Ohhhh, this was SO good. I cut the recipe in half for our home of two, and devoured the thing. Will definitely be making again. Served with green beans and mashed potatoes. How much more all-American comfort food can you get??!!

Oh so good! I also cooked my chicken at 375 for half hour, and they turned out perfect. Next time, I would put cheese below AND above the bacon to keep it from falling off. A keeper!

This is a great recipe (although I use italian sausage instead of ground beef), but it does take a lot of time to prepare. It is worth it to make a double batch and freeze them in one meal increments so when you want them again (which will be soon), you will already have them on hand.

A great recipe that we enjoyed very much. Although spicy (adjust to your taste), the crushed red peppers give it the right amount of punch to set it apart from other pasta dishes. In addition, the homemade chicken tenders were a great addition, but if you are short on time, cooking up pre-made chicken tenders tastes good too. We always look forward to having leftovers of this dish!

Salsa Chicken

I really like this recipe, it is so easy too! We usually cook the chicken, then cut it into strips for burritos. But, if you are planning on doing that, I would suggest cutting the chicken up before you cook it, then putting a sprinkle of taco/burrito seasoning on each strip, and covering with salsa. It ensures that every bite of chicken is full of flavor!

This is a great soup. This has been a favorite each time I've made it. Although, one box of pasta is definitely too much. We only use about 1/3 of the box when we make the full recipe and it turns out perfectly.
