Minestrone Soup I

I usually make Jamie's Minestrone from this site, but I had a handful of potatoes I needed to use, so I found this recipe. I made a few small changes...such as using diced tomatoes instead of stewed (I would actually use crushed next time), and only used 1.5 tsp of dried basil with 1/2 tsp of dried italian seasoning (2 TBS sounds like a LOT of dried herbs). I also cooked the noodles separately and added to the soup upon servings. It turned out quite good. More like a pasta e fagioli than a minestrone, but my 5 and almost-2-year-old ate it with no complaints.

Slow Cooker Baked Potatoes

This recipe is genius! I never have time to put baked potatoes in the oven, and the microwave just isn't the same. I rubbed these with EVOO (though I would use a more neutral flavored oil next time since the oil was pretty strong tasting), and didn't wrap them in foil. I cooked on low about 7 hours, and while I couldn't expect the skins to be crispy, they weren't soggy either. The only thing that made this a 4* was the strong EVOO. If I used vegetable oil, or perhaps even skipped the oil next time, it would be a 5* recipe.

Grilled Salmon I

My 5 year old loves salmon (it's her favorite meal). She ate 2 full servings, and said she liked it better than my usual baked recipe. I didn't marinate as long as the recipe said (only about 20 minutes), but it was still very good. I think the Lemon Pepper is the secret ingredient. The first time I made it, I didn't have it on hand, and it wasn't as good.

Garlic Green Beans

Chili Seasoning Mix II

I've used this for chili a few times. It has great flavor, but is surprisingly mild. For a spicier chili, add more chili powder and crushed red pepper. It lends a good flavor without the heat, so even my kids like chili when I use this seasoning.

Lentil Soup

We enjoyed this soup. I cooked it in the crock pot, and added 2 ham hocks for some extra depth of flavor, but followed the recipe exactly otherwise. It needed a little more spice, but my family really liked it. It made enough to freeze as well.

Bourbon Whiskey BBQ Sauce

This was a very good and unique BBQ sauce. It was definitely better after it sat in the fridge for a couple days, as the flavors melded. I strained the sauce, as I like smooth sauces. I used this for BBQ chicken and also for BBQ chicken pizza. I still have some leftover and plan to mix it with ranch dressing for BBQ chicken ranch salad.

Homestyle Turkey, the Michigander Way

I used this recipe to make my first turkey, and it was very simple and delicious! I used chicken broth instead of chicken bouillon/water, but did everything else the same. Will definitely make again!

Quick and Easy Chicken Noodle Soup

This was so easy and delicious! I added some more carrots and celery just because I had them on hand and used all chicken broth instead of vegetable broth. Thanks for a keeper. My whole family loved it.

Pasta Salad a la Honeybear

Very good pasta salad. I used pepperoni instead of salami and left out the green olives (family preference), but everything was very tasty. I might omit the pepperoni/salami and add chicken next time and serve as a main dish instead of a side.

Never Fail Chocolate Chip Cookies

I'm pretty picky about my chocolate chip cookies, but these did not disappoint for a very basic recipe. I liked the crisp edges and mildly chewy (not cakey, which is one of my pet peeves), center. My 3 year old requested a simple chocolate chip cookie recipe, and this one did not disappoint.

Cantina Pinto Beans

This was pretty good, but it needed more seasoning...maybe more salt? I followed the recipe (though I cut it in half), except I sauteed the veggies and spices before adding them to the beans. Nice change of pace from our regular bean recipe, though.

Strawberry Pie II

I made this pie for an Easter get-together, and I really enjoyed it. I used a different whipped cream recipe, though. I melted 2 oz dark chocolate and spread it on the pie crust per another reviewer, and that really took it to another level. My only complaint (and the only criticism I heard from other people), was that there was not enough whole, sliced strawberries, and too many "jam-like" strawberries. I actually used around 1.5 lbs strawberries instead of 1 lb. Next time I would make less filling and use more whole sliced strawberries.

Sweetened Whipped Cream

This did take about 10 minutes to whip, but the results were fabulous. It was delicious. I'm not a fan of some of the ingredients in the store bought whipped creams, so this was perfect. Just a note, the texture is more like cool whip than the aerosol cans of whipped cream, but it's perfect over pies or fruit.

Whole Grain Breakfast Cookies

I made these so my daughter would get some protein in the mornings. The flavor was wonderful. I baked mine a little longer, and flattened them prior to cooking instead of after. I didn't use flax, and didn't add anything else to make up for it, so the cookies were a little wet. But, that was my fault, so I'm not penalizing the recipe. The only reason I gave this 4 stars instead of 5, is that I think there is too much chocolate. (You will NEVER hear me say that again.) I would probably cut the chocolate chips in half next time, and use more raisins. (Which I subbed for the cherries.) I also used coconut oil instead of canola, PB instead of almond butter, and honey instead of agave. I think this will be a family favorite now that I know how to tweak it. Overall, a great recipe to customize, and a healthy, quick, breakfast option.
