Jammin' Tarheel Chili

I lost my favorite chili recipe and this one comes very close to it! I only add 2 cans of beans and leave out the mushrooms and celery (mushrooms in chili seem so misplaced). I increase the chili powder to 1/3 cup and coriander and cumin to 3 teaspoons. Serve it over chips, top with shredded cheese, sour cream, and jalepenos!

Watermelon and Feta Salad with Arugula and Spinach

It has a very mild, but refreshing flavor. My husband and I liked it very much and I'll keep it as a summer favorite when I'm wanting to change up the pace a little. I wondered about adding fresh mint to it and plan to try it next time I make it.

Oven-Roasted Root Vegetables

I just put this in the oven but following the recipe to a T, this will feed twice, if not more, as many people. I only put half of it in the oven (didn't halve the oil mixture though) and I think with 5 adults and 2 children we will still have left overs. I'll come back to update this review after we've actually eaten.

Polenta with Rosemary and Parmesan

I subbed regular chicken broth and half-n-half instead of milk. Had it for dinner and then leftovers for breakfast the next day. I love grits and the only thing that will prevent me from making this again is I love to try new grit/polenta recipes.

Fresh Corn and Tomato Casserole

I've been getting fresh corn from the farmer's market (ewww, to the worms) and using my husband's heirloom tomatoes and I love this. The 2nd time I made this I added black pepper, fresh parsley and 2 green onions to the skillet along with the corn.

Peach Praline Muffins

Tequila Shrimp

I prepared this tonight for dinner...quick and simple. We all found it to bland. Could have used more cilantro. I followed the recipe to a tee but added a couple of pinches of red pepper. We'll have it for dinner again tomorrow but I'll not prepare it again.

Happy Roast Chicken

I was VERY pleased with how this bird turned out! And will use this recipe as my "go to" recipe instead of "go to" Kroger and get one already roasted. The only reason I didn't give it 5 stars is I'd like more seasoned flavor than it already has...will experiment with different fresh herbs in the future. Oh, and because I didn't get any wine (I don't like dry wines)...I used a dark beer instead.
