No Bake Chocolate Oat Bars

Reviewed: Aug. 15, 2008
These were gone before I turned around to get a second bar! The only thing I changed was that I only had regular oats on hand. It still came out great, though.

Vegan Bean Taco Filling

Reviewed: Nov. 23, 2008
This is the best! I have used this as a filling for make-ahead burritos. Just put a large spoonful of this filling into a taco-sized tortilla, wrap into a burrito, cover with aluminum foil, and freeze in a ziploc baggy. I make these ahead of time and heat them in the microwave when I'm in a hurry for lunches.

Slow Cooker Lasagna

Reviewed: Jul. 16, 2012
I used KARLA10's layering suggestion and this turned out very good. I added 1 Tblsp. of Wildtree spaghetti seasoning and one small , chopped onion to the pan of sausage, and also mixed in the 2 jars of spaghetti sauce to help with quicker layering. Instead of ricotta cheese (my family and I don't like ricotta in our lasagna), I put in some low-fat cottage cheese. I added 1 box of organic spinach and some shredded parmesan into the cheese mixture to add in some veggies. This is simply delicious and I am so happy to be able to make this in the crock pot since we will be having 100+ degree weather in my area for the next few weeks. I love my crockpot!

Banana Cranberry Muffins

Reviewed: Feb. 25, 2009
Delicious! Make sure that the bananas are over-ripe or you may not be able to taste them much (if at all) in your muffins. I brought these to work one day and they were a hit! My hubby loves them, too.

Easy Batter Fruit Cobbler

Reviewed: May 2, 2010
Simply delicious! I used skim milk and frozen mixed fruit (peaches, strawberries, pineapple, and mangoes) and it came out so great. I'm going to try this with Splenda in place of the sugar next time so my husband can feel less apprehensive about eating this great dessert. Thank you so much for sharing this recipe!

Taco Seasoning I

Reviewed: Aug. 21, 2009
I think this recipe is great! I had to cook 20 pounds of taco meat for a birthday party and didn't want to spend the $ on season packets since I knew I had all the spices at home. Found this recipe and it worked well. I quadrupled the recipe per 5lbs. of meat and took out a bit of salt. When the meat was brown, I added 1 cup of water (for 5lbs. of meat) and the seasoning and let simmer for about 10 minutes. Food was being made for the next day, so it sat in the fridge overnight and blended all the seasoning just right. It tastes great and the heat factor is dead on. Thanks!

Cream Cheese Frosting II

Reviewed: Dec. 25, 2010
This frosting is PERFECT!!! I took a reviewer's advice and only used one 8-ounce package of cream cheese to cover one rectangular banana bread cake, but kept everything else the same with the recipe. Delicious - thanks for sharing!

Classic Peanut Butter Cookies

Reviewed: Nov. 22, 2009
These are delicious! I didn't refrigerate the dough for an hour, I just placed the cookie sheets in the freezer for a few minutes before placing the cookie dough onto the sheets. I also placed the bowl of cookie dough in the fridge as the previous batch cooked. I took some others' advice and added 1/4 cup peanut butter and 1/4 cup flour. I rolled each cookie dough scoop in sugar and pressed down with a fork on top. I also had to set my stove to 325 because it runs hot...and I baked them for 7 minutes. Thank you!

Cranberry Dip

Reviewed: Nov. 25, 2009
Delicious! I cooked my frozen cranberries on the stove using Splenda instead of sugar and I added about 1/2 to 3/4 cup of water to the pot. They were ready in about 10 minutes. Then I added strawberry jam and walnuts to the pot and refrigerated. Turned out great! Thank you...I needed a recipe to use up my old, frozen cranberries and this one is quick and easy.

Banana Bread

Reviewed: Dec. 27, 2009
My hubby is diabetic, so I did a little playing around with the recipe. I replaced the white sugar with 1/2 cup Splenda granular (NOT the one for baking) and 1/4 cup Splenda Brown Sugar. I also added one more banana since I had several that were getting too old to keep. I also added 1/2 tsp. baking powder, 1/2 tsp. cinnamon, and 1 tsp. vanilla extract, as suggested by another reviewer. I also took that reviewer's advice and replaced 1/2 cup of flour with whole wheat flour since I had some I needed to use. Right before pouring the batter into the baking dishes, I mixed in 1 cup chopped pecans. After splitting the batter into a bread dish and a cake dish, I baked them as per the instructions. The only thing I will do differently next time is put the whole bowl of batter into one bread baking dish...the Splenda did not allow it to rise as much as it should have risen while in the oven so I cut it up into cake-like pieces when it was done. Placed into just one dish would've made it "sandwich-slice worthy".

Darn Good Chili

Reviewed: Jan. 3, 2010
This is a very good base recipe! I added some chopped sweet yellow and red peppers and one more can of beans. I also cooked this all in a crockpot...cooking the peppers and hamburger together in a pan before adding to the mix. Thank you very much!

Caramel Frosting IV

Reviewed: Aug. 14, 2010
I cannot believe how good this frosting is! I wasn't so sure after I removed it from the heat the first time because it got a bit lumpy, but after adding the milk and reheating, it smoothed right out. I was very excited to find out that this turned out great even though I substituted the original recipe with soy milk. My hubby's lactose intolerant, so when he said he loved it, I knew I had a keeper. This tastes heavenly spread over the Applesauce Cake VI, found here on this site!

Fruit Pizza I

Reviewed: Jun. 18, 2007
Luckily I tasted the cream cheese mixture before adding all the sugar because I only used 1/4 cup, along with neufatchel cheese instead of cream cheese to cut down on fat. Spread was plenty for two pizzas! I used kiwis, raspberries, and strawberries and it was delicious!
