Easy Tuna Casserole

I also tried adding a can of peas, an extra can of tuna, a soup can of milk and some salt and garlic powder - DELICIOUS!

Spinach Stuffed Chicken Breast

I loved this! I didn't use bacon and I used chicken tender fillets, rolled out very thinly, instead of chicken breasts. I also put the remaining filler on top of the chicken rolls, which kept the chicken very moist. This makes a really great appetizer, but an even greater main dish (with rice). I've had frozen spinach in my freezer FOREVER and now I know a quick recipe to use it up! Thanks.

Laura's Quick Slow Cooker Turkey Chili

This chili was EXCELLENT! My husband raved about it and even ate leftovers the next couple of days with no complaints. I couldn't find red pepper flakes at the grocery store, so I left that out and added some canned jalapenos and a little more chili powder (we likeo ur food spicy).

Homemade Black Bean Veggie Burgers

These were really tasty burgers. My husband even loved them and said that they were very filling, which they were. I made them a bit too big, though, so it was a little hard to flip. Be mindful of the size you make your patties!

Crispy Butter Cookies

These were THE BEST homemade butter cookies I have ever tasted! I gave these as gifts this Christmas and they were a hit. There were only two things I changed: the baking temperature and the baking time. They took way too long on 350, so I changed the oven to 375 and baked them for about 20 minutes. These were total melt-in-your-mouth goodness! Thanks.

Whole Wheat Banana Nut Bread

EXCELLENT! I have been searching for healthier baking recipes and this one is near-perfect. I used Seattlecooks' suggestions (and added some of my own,) by doing the following: for sweetener, I used 1/4 cup honey and 2 Tblsp. Splenda brand brown sugar baking blend, 1 1/4 cup (or 3 good-sized) mashed bananas, 1/4 cup nuts, and 1/2 tsp. cinnamon. I will try substituting the oil for applesauce next time, but other than that, this bread was great - and I did it all using my bread machine! It didn't even dry out (as others have stated) for the three days it actually survived in my kitchen =o). Try this and you will not be disappointed! Thanks so much! My husband is still raving about it a week later.

Croutons

Excellent! My hubby and I are on the Weight Watcher's program, so I used Village Hearth brand Light Italian Bread, Parkay brand FF Spray Butter, and Mrs. Dash Garlic and Herb flavored seasoning. We both have been eating them as a handy snack. Thanks so much!

Strawberry/Rhubarb Crumb Pie

I used both frozen rhubarb and strawberries; I thawed them before mixing them into everything else (it only took about 20 minutes to thaw). It came out tasting excellent, but I somehow got too much filling in the crust so it bubbled over. It would have been the perfect amount in a deep-dish pie crust. The mess was worth it! This was my first attempt at making a pie from scratch and I loved it...thanks.

Tara's Sweet and Chunky Chicken Salad

Hubby doesn't usually like fruit in his mayo-based salads, but he ate this up! Thanks - I didn't have to make ANY tweaks or changes to the recipe, other than using boiled & shredded chicken breast meat.

Fruit Pizza I

Luckily I tasted the cream cheese mixture before adding all the sugar because I only used 1/4 cup, along with neufatchel cheese instead of cream cheese to cut down on fat. Spread was plenty for two pizzas! I used kiwis, raspberries, and strawberries and it was delicious!

Chocolate Oil Cake

It's the best chocolate cake I've made, but it was a bit too oily for me. My husband liked it, though. I don't think it's chocolaty enough for me. I used Duncan Hines Whipped frosting in a can to cover and that helped a lot. Thank you! I will keep this recipe and tweak it the next time I bake.

Vegan Bean Taco Filling

This is the best! I have used this as a filling for make-ahead burritos. Just put a large spoonful of this filling into a taco-sized tortilla, wrap into a burrito, cover with aluminum foil, and freeze in a ziploc baggy. I make these ahead of time and heat them in the microwave when I'm in a hurry for lunches.

Spaghetti Casserole III

This is a delicious recipe for serving a lot of people spaghetti. I followed the recipe pretty well, but I used 1 jar of spaghetti sauce instead of ketchup (yuck) and mixed shredded sharp cheddar cheese, mozzarella, and fresh grated Parmesan. It's so yummy this way and a favorite of everyone's!

Banana Cranberry Muffins

Delicious! Make sure that the bananas are over-ripe or you may not be able to taste them much (if at all) in your muffins. I brought these to work one day and they were a hit! My hubby loves them, too.

Fresh Cherry Cobbler

This was very good! My hubby is diabetic so I used sweet cherries and cut the sugar in half and then used half Splenda, half regular sugar. It turned out a bit spongy (I've noticed that Splenda can do that to some cakes and bars), but the taste was great. Oh, I also added 1 tsp. cinnamon and 1 tsp. vanilla extract to the crust. Next time I will use double the cherries and may even put it in an 8x8 pan to make it come out a bit thicker. That way each bite would have cherries. Thank you!
