Chocolate Torte

A solid, pleases everyone chocolate cake with yummy frosting. Not something I would make to impress company with my baking prowess, but it DID get devoured. MAKE 1 AND 1/2 THE FROSTING (doubling it, as suggested below, is waaay too much - and i love frosting. 1.5 is just right!)

Stuffed Green Peppers

I made a LOW CALORIE VERSION of this yummy recipe. First of all, I use just a small amount of brown rice. The vegetables have such a fanstastic flavor - the rice is just there to make it more filling, but it is also highly caloric (and has little nutritional value). I used about 1/2 a slice of fat-free swiss in each pepper (waaay less than the recipe calls for), threw in a layer of raw mushrooms and onions (they cook themselves nicely in the juices), and topped the peppers with a few tablespoons of crushed tomatoes (healthier AND it lends a simple, delicious tomato flavor) and a tablespoon of fat-free sour cream to each. For us calorie-counters, this is a genius meal.

Chicken and Spinach Ravioli

Admittedly this was my first shot at ravioli - but this just tanked. The dough was far too sticky, the ravioli too heavy - surely I did something wrong (but not such a complicated recipe!) We couldn't eat it, which is too bad because I spent HOURS on it. I am officially scared off of home made pasta =(

White Chocolate Raspberry Cheesecake

I have had the PLEASURE of making and serving this luscious desert a few times: every time it both looks and tastes professional. TRUTH: the first time I made it I did so because I'm an obsessive calorie counter and didn't want to make a desert I'd actually want to eat (I usually hate fruity deserts). Let's just say my intentions were one-upped by the most incredible cheesecake in the history of man. Watch out - even better the second (and third) day. I do indeed double the sauce. Time consuming but a lot of fun - make it with a friend!
