Chicken Caprese

This was absolutely delicious! I tweaked it just a bit. I added a few red pepper flakes to the spinach and when it was wilted, I removed it from the pan. Then I put in a fresh diced tomato and just sauteed it until it softened up, and then removed that from the pan. I then added a bit more olive oil and cooked the chicken as instructed. I then put the spinach, tomatoes and fresh mozzarella on the chicken(I used the small balls cut in half because the store didn't have the larger) and cooked it as instructed. I'm not a huge balsamic fan so I omitted that. My husband said it was restaurant worthy!! Thanks for the recipe - it's a keeper!

German Apple Cake I

I made this today and as others suggested I reduced the oil to 3/4 cup and the sugar to 1 and 1/2 cups and I'm so glad I did. The cake is very tasty and has a chewy texture on the outside but even with reducing the sugar it was sweet. I would definitely make it again, but I would cut back on the sugar even more. I added chopped walnuts and enjoyed them in the cake.

Delicious Ham and Potato Soup

I made this for finer tonight and it was great! It's easy and very tasty. I added more ham and some carrots, and as others suggested, I cut back on the bouillon to about 1 and 1/2 tbsp. a definite keeper!

Cherry Pie with Almond Crumb Topping

I made this today and everyone absolutely loved it! I used Dole frozen cherries and added a dash of cinnamon to the filling and the topping. I also cut back the salt in the topping based on other reviews and increased the brown sugar just a bit. Next time I might cut back the corn starch a little bit, but I am the only one who felt that way! Thanks so much for sharing the recipe - it's a keeper!

Cherry Pretzel Squares

I made this today and it was very tasty, I did use about 3/4 stick of butter and I still didn't end up with a crust that stayed together. I also ended up making 2 batches of filling because one was not enough for both layers. I gave it four stars because it does taste very good,

Coconut Cream Pound Cake

This cake was very tasty but I'm really glad I cut the sugar to 2 1/2 cups. I think you could even cut it back a bit more as others have suggested because it is on the sweet side. The flavor was really good, but if I make it again I might increase the coconut extract a little bit. The cake wasn't dry, but it is dense as pound cakes usually are. I was thinking that a little vegetable oil in the batter would make it a bit moister if that's what you are looking for.
