Pepperoni Casserole

Easy to make and inexpensive too. I used 2 jars of Ragu six cheese sauce and added Italian seasonings and crushed red peppers (we like spicy), put the olives in the sauce. I did use mild sausage as I was afraid the hot would make it too hot, thus the peppers. Used 12 ounces of ricotta instead of 24 of the cottage cheese and 16 ounces of mozzarella. Baked 35 minutes, we like the pepperoni crispy. Next time will add fresh chopped green pepper, maybe some onion and use 1/2 hot sausage and 1/2 ground beef leaving the crushed red peppers for a topper. My 21 year old son liked it but says no olives next time. He would eat it again.

Penne with Chicken and Asparagus

I combine this recipe with anonther on this site and add a diced tomatoe. Makes for a PERFECT meal. uUse only 3 Tablespoons of olive oil (2 for cooking and 1 for drizzling) then use 3 boneless breasts use 4 cloves of garlic and 1 tsp of crushed red pepper (maybe a little more) and 1 tomato diced. Add the red pepper and tomato to step 3. PERFECT - I am telling you PERFECT! My teen boy asks for this!

Asparagus, Chicken and Penne Pasta

Make this perfect with 1/2 cup chicken broth, 1 tsp crushed red peppers and 1 totmaot dieced. Make it with 3 boneless skinless chicken breasts and 3 tablespoons of olive oil, 2 for cooking and 1 for drizzling. Makes for a PERFECT meal, just add some salad and maybe bread,

Amazing Pork Tenderloin in the Slow Cooker

I made 2 pork loin roasts for a party, and used 2 different recipes. This was the one everyone raved about and the easiest to make! Super tender super moist and the au jus was raved about as well. I will definitly use this recipe again and again. I had a larger roast..almost 4 pounds and cooked it on high for 4 hours....perfection!
