Gourmet Sweet Potato Souffle

This was delicious! More like dessert than a vegetable side dish, but I'm okay with that! It tasted much like pumpkin pie and was very smooth and velvety (I don't have a food processor so I used my Vitamix blender). The middle wasn't done though...I'd say about 10 more minutes would've been perfect.

German Apple Cake I

This cake was delicious. I'd say it's more of a coffee cake than dessert cake, though. I made it in a bundt pan, which for some reason did NOT work (I'm thinking it was too moist because of all the apples?) - it plopped out of the pan in clumps...but I'm sure a 9x13 would've worked fine. It was pretty soggy even by the late evening of the first day, which I don't mind too much, but by the next morning it was mush. I made the caramel sauce (1 stick butter, 1/2 cup brown sugar, 1/4 cup heavy cream, boil 3 minutes then add 1 tsp vanilla) that some others recommended and it was delicious poured on top!

Sarah's Banana Bread Muffins

For my first batch,the only thing I changed was to use 3/4 C sugar instead of the full 1 C, since so many people suggested that. My muffins came out way too dark (350 for 30 min)and a little dry. Tried a second batch right away, since it's easy and I still had more over-ripe bananas. This one was much better: 325 for 25 minutes, and I added 1 more banana, since mine were small, and 1 tsp of vanilla. Yum!!! Simple, quick, lovely gift to bring to my husband at work and have around the house for my toddler and I to snack on all day. :o)

Edible Play Dough

I gave this a 4 because it is too sticky/oily when made exactly like this, although it may depend on the kind of peanut butter you use. I like to add oatmeal, raisins or craisins, seeds or nuts, even some ground flax meal to make it even more nutritious. Can shape into balls and refrigerate or press into a pan and cut into squares. My husband and I love them as a quick breakfast, and our 1-yr-old son can't get enough of them!
