Cream Cheese Frosting II

Did as other posters suggested and used 8 oz cr cheese, 1/2 stick butter, 1 tsp vanilla and 2 cups powdered sugar. Very easy and delicious. Frosted 2 doz cupcakes and still had a lot left over.

Heavenly Zucchini Salad

Excellent salad! Also added a large seeded, diced cucumber, omitted the peanuts because I didn't have any and reduced the sugar to 1/2 cup. DH loved it! Great way to use up whatever summer veggies you have on hand.

Mexican Bean Salad

Easy to make and a very colorful salad. Did as others suggested and cut olive oil and vinegar in half. Left rest of seasonings as is except increased cumin and chili powder for more zip. Was plenty of dressing for the salad. Makes a large bowl full.

Excellent recipe. Very easy, but looks like you fussed. Used center cut bacon in place of the prosciutto as that is what I had on hand.

Cranberry Chicken I

Great recipe. Used jellied cranberries, ff Catalina dressing and 2 T dried, minced onions in place of the soup mix to cut down on the sodium. The sauce is delicious and had over brown rice.

Unstuffed Cabbage

This was great and easy to prepare. I did add 2 cups water as some others suggested as well as some garlic. The cabbage was still on the crisp side after baking for 1 1/2 hours, but we both preferred it that way, rather than mushy. Would definitely say it makes more like 6 servings, than 4. Have plenty for at least another meal.

Pleasing Peas and Asparagus

Excellent! Used 16 oz bag of peas and 1 pound of asparagus as that is what I had on hand. Reheated leftovers were still great. Will definitely make again.
