Tomato Basil Salmon

Reviewed: Jun. 15, 2009
very good! We eat a lot of salmon at our house, and this was delicious. I didn't have any basil, so I used a commercially prepared "citrus basil" seasoning. I also forgot the olive oil, but didn't seem to miss it. I will definitely make this one again!

Very good! The crust is exceptional! I would recommend spraying your pan, it gets a bit sticky getting them out of the pan. I will make these again & again

Beef Stroganoff III

Reviewed: Aug. 2, 2009
Excellent! True stroganoff flavor. I used a small yellow onion, and marinated my beef in red wine before hand, omitted the wine at the end. I also used fresh mushrooms. I will make this a regular on my menu!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Sep. 4, 2009
I made this twice in 2 days, each time for a different pot luck. The first time I omitted the white sugar, served it with cinnamon graham crackers and it was great! Not thinking it could get any better, the next day I took the time to make the cinnamon chips and it was even better! The second time I used less apple, and more berries, just to my personal taste.....I will use this one again! FYI, the hint about using the sink to stack 4 tortillas at a time in to eliminate mess was pure genius! I took it one step further and lined the sink with aluminum foil....just wad it up & throw away when done!

Garden Fresh Tomato Soup

Reviewed: Sep. 23, 2009
very good! I didn't have an onion, so I used onion powder. I also added fresh basil. I blanched, peeled, and seeded the tomatoes before cooking, then put it all through the blender at the end because I didn't have a food mill. A bit labor intensive, but worth it!

Bacon Wrapped Dates Stuffed with Blue Cheese

Reviewed: Dec. 19, 2009
YUM! I made these for a potluck Christmas party and they were gone immediately. I personally wasn't as pleased with them at room temp as I was when they were hot and gooey, but no one else seemed to mind. A little labor intensive, but will probably make again.

Braised Balsamic Chicken

Reviewed: Feb. 11, 2010
YUM! I added a yellow bell pepper cut into strips and some artichoke hearts. Hubby loved it too! Next time I will add mushrooms and maybe a sprinkle of parmesean cheese. I served with steamed asparagus and bow tie pasta for a complete meal. It's a keeper!

Carne Con Chilies

Reviewed: Oct. 18, 2010
This was incredible! I used a pork roast instead, put it all in the crock pot and let it simmer all day. I didn't have the jalepeno or red chile peppers, I chopped a half a green pepper instead, and a small red onion chopped. I also added cumin to the seasoning. After I dished it up, I topped with shredded pepper jack cheese, sour cream, then served with warm tortillas. Absolutely divine! My hubby has asked me to make this every week. Can Do!

Cranberry Streusel Pie

Reviewed: Dec. 11, 2010
this is fantastic! I use 2 full bags of cranberries, and increase the sugar to 1 cup. I also use butter in the topping instead of shortening. This has become the pie everyone requests for the holidays, & I usually make another one just for me & hubby.

Grandma Ople's Apple Pie

Reviewed: Dec. 12, 2010
I would give this 4 1/2 stars if I could. Very tasty, even from those who aren't apple pie lovers. I made my first one with a lattice crust and it turned out not just delicious, but beautiful to look at as well. I used half G. Smith, and half Golden delicious apples. I also added cinnamon to the apples. I am going to try this again with a streusel topping, serve warm with ice cream. Yummy!

Butterscotch Oatmeal

Reviewed: Dec. 19, 2010
would give this 4 1/2 stars if possible. I loved it! I am an oatmeal fan, and this was creamy and comforting. I only used about 1/4 cup brown sugar, and used 1/2 c heavy cream and the rest 2% milk. I also added a dash of nutmeg, a dash of vanilla, and about 3 dashes of cinnamon. My hubby thought it still a little sweet for him, and requested raisins next time. Am gonna make this again, and experiment with adding fruit and nuts. Overall, great recipe!

Mom's Macaroni and Cheese

Reviewed: Jan. 1, 2011
comfortingly delicious! I live by the motto "one can never have too much cheese", so I used 2 cups of shredded cheddar & it was excellent. I also forgot to add butter to the bread crumbs, but don't think we missed it. My SIL asked for the recipe, and I will be making this over and over!

Baked Oatmeal II

Reviewed: Jan. 9, 2011
YUM! I halved this recipe, & wish I hadn't cuz we ate the whole pan in one sitting. I didn't have any dried cranberries, so I chopped up one apple, and used raisins instead. Totally delicious! My hubby says "make this again!" I most definitely will, and make a full recipe so we can eat on it for more than one breakfast.

Indian Chicken Curry (Murgh Kari)

Reviewed: Mar. 20, 2011
this is just like the chicken curry my friend Margaret from Sri Lanka used to make! I have been looking for a similar recipe for years; this is easy & delicious. It tastes better the next day, reheated. Serve over rice. I was out of plain yogurt today and used sour cream, couldn't tell any difference! I also leave out the cilantro, because I don't like it. Wonderful comfort food!
